UBE 496 Nutrition & Environment
Spring 2015
Meatless Monday Assignment
The purpose
of this assignment is to practice Meatless Mondays (over the
course of 6 Mondays) to experience a public health campaign and to record how
the experience impacts you.
Six Mondays during the Spring semester
you will be asked to practice “Meatless Mondays”. This is John Hopkins’
Bloomberg School of Public Health’s campaign to lower saturated fat intake by
15% by going meatless 1 day a week. For more information, you can visit http://www.meatlessmonday.com
Note: If you currently don’t eat
meat, each week you are to try a new food that you have never eaten before, from
varied groups each week (a new protein food, a new vegetable, a new fruit, a
new legume, etc.). Locally grown and produced foods encouraged.
Requirements:
1) Submit a one page (12 pt font,
double spaced) ‘journal’ on the Tuesday of the week that you practiced meatless
Monday. You will need to submit this document via email to ubmeatlessmondays@gmail.com by
11:59pm on Tuesday.
You must include your first and
last name as well as the date of the assignment.
Once you send in your submission,
it will be posted online on our blog: www.ubherbivoremondays.blogspot.com
2) The second part of this 6 week
meatless Monday project is to post comments on one other entry that was
submitted by your classmate. By Thursday 12 noon of the week that you practice
meatless Monday, you will post a minimum 250 word comment on one of your
classmate’s meatless Monday submission on the blog.
Grade:
In order to get full credit for each week you must make sure you do the following:
Each week (for a total of 6 weeks) submit a one page ‘journal’ on the Tuesday of that week by 11.59pm.
By Thursday, comment on a classmate’s entry on the blog. Strictly follow posting guidelines that are on the blog.

What did you learn, if anything?
What were the main challenges, what did you do to overcome
them?
Did you eat any foods that were new to you?
Do you have any ideas for future classes applying this
Meatless Monday public health campaign?
