Week 1 Sophia

            My first week trying Meatless Monday was not extremely challenging.  It was something that I had to think consciously about throughout my day, but I have always been a healthy eater.  I usually try to make health conscious decisions so I saw this as something I wanted to try.  I decided to cook at home for the day because I could. 
            For breakfast I had a serving of Nature’s Path Organic Pomegranate Cherry Granola with milk over it.  I ate this with a sliced pear on the side and a serving of orange juice.  This was an easy meal because it didn’t take much preparation, and it was still very tasty.  I think breakfast was one of the easier meals for me to try because there are many options that don’t even require cooking.  It is also a time of day when fruits and vegetables seem to be more appetizing to me.
            For lunch I made a small pizza.  I made it with a whole wheat crust, tomato sauce, mozzarella cheese, broccoli, chopped garlic, and red bell pepper.  I had these ingredients on hand, and I had bought the whole wheat dough pre-made at the grocery store.  I used broccoli florets because it is one of my favorite vegetables and sprinkled on the garlic over the sauce.  I added the sliced pepper and a little cheese on top.  It was very good, and I only had two slices. The rest went to my roommates.  I had a small snack in late afternoon of hummus and carrot sticks.  My roommate and I had already made the hummus the past weekend with chickpeas, garlic, tahini, olive oil, lemon juice, and cumin. 

            For dinner I made brown rice with vegetables cooked in a yellow curry sauce.  I used chunked butternut squash, sweet potato, shallot, and cauliflower.  I bought the yellow curry sauce at the store and simmered the veggies in it.  It was very good.  I realized at the end of the day that going meatless was not that hard and the food was very enjoyable.

    I completely agree that going meatless throughout the day is something that you have to think about consciously. And it is great that you are already a healthy eater which probably makes it easier for you to think of ideas for meals that are meatless, nutritious and delicious. And I do have to say the pizza that you ate sounds delicious!

    I also shared one of my meals with roommates. It is rewarding to have people enjoy the food that you cook. Especially when its something that you have never tried cooking before. And to cook with a roommate like with the hummus you made earlier in the past weekend; i feel can be rewarding as well.

    Cooking when you have the chance to cook is great and I believe the same thing. If you have the time and food then why not cook if you can.

    I also agree that breakfast is a very easy meal because of the vast options that do not require any cooking. It is a much simpler meal and one that I usually enjoy having to start the day. Unfortunately, I didn't have breakfast for my meatless monday but really like your choice for a healthy breakfast because I love pears.

    Going meatless was an experience for me that I thought would be harder but in the end seemed to be easier than I thought. It is nice to see that you feel the same way. It is a conscious thought that does go through your head throughout the day but was a rewarding experience at the end of the day to say "i really did it."
