Meatless Monday Week 2
This Monday I made sure not to forget that it was our second Meatless Monday since I almost forgot last week. This week I planned ahead instead of scrapping something together. I decided to try the corn quesadillas that Sowmya recommended in her email to the class. I went to Wegmans on Sunday and bought the ingredients. The quesadillas were really easy to make because the instructions were short and simple, also there was not a huge amount of ingredients. I decided to substitute a frozen vegetable stir-fry mix in place of the can of beans since it was cheaper. The quesadillas were delicious and did not take a lot of time to make and prepare so I made them for dinner. For lunch, I ate a frozen cheese pizza that I cooked in the oven. I also bought this at Wegmans because I saw it when I was in the frozen aisle looking for a vegetable stir-fry mix for the quesadillas. It was another easy meal to make and was already prepared. For breakfast, I had my usual bowl of cereal, eggs and a fruit smoothie.
My meal that was most effected was my lunch. Usually for lunch I'll make chicken or rice with pasta but I obviously couldn't do that on Monday so I impulsively bought the frozen pizza when I saw it. I didn't feel as great as I normally do when I make a clean, healthy meal but the pizza did keep me full until dinner. Going meatless on Monday doesn't really have an impact on the rest of my week. However, it has opened up my mind and options to all different types of food since every Monday I need to find a substitute for meat. As a result of this, I've been looking online at some recipes for future weeks and finding some cool meals that I might want to try on my own not just because I have to go meatless. I think this project is definitely broadening my perspective on different types of foods and opening me up to whole new options.

ReplyDeleteI completely understand buying food impulsively when you see it. Usually when I buy something impulsively it is not a healthy choice at all and usually much worse than pizza. And when you said that you did not feel as good as you normally would after eating a clean and healthy meal I completely agree. There are some days where I don't eat healthy all day and feel sluggish and tired the rest of the day and night. It really does make me feel better to eat healthy food.
I also completely agree with your reasoning for buying some of your food choices at Wegmans. All of my shopping for food revolves around how much money I have at the time. Cheaper is usually always an easier choice because of money. And honestly if it fills you up then you don't really think about how bad it may be for you to eat.
I like your idea of taking one of Sowmya's recipes that she posted. I have already started to struggle with ideas so I may be using her ideas in the future or also going online and finding some easy ones like you might do in future weeks. The corn quesadillas look like they tasted good and also sound really easy. Cooking can be a long process so it is always nice to have a nice simple recipe. Making complicated meals just takes so much time to do and can get really pricey.
I also really like your breakfast choice. Cereal, eggs, and a fruit smoothie all sound like a great part of a breakfast. I have never actually had a smoothie at breakfast but i'm sure it is really good. Cereal and eggs are simple and something where if i'm busy in the morning will make frequently.

Hi Quentin, I completely understand that when it comes to a hectic schedule you would want recipes that have a few ingredients that you could put together for a simple meal but at the same time feel full. I'll be sure to post more recipes that are simple.

ReplyDeleteYour dinner that you tried from Sowmya's recipe sounded really good and nutritious. It sounded like it had a good variety of vegetables in it, and it is a meal that I would not normally try. I always do love Mexican style food though. I think I will try to use her recommendations in the future weeks. Your choice was appealing because it had so few ingredients. I'm always open to cooking when it is a simple meal.
I understand that you didn't feel as healthy after lunch because I didn't eat a very healthy lunch either. I definitely have more energy after I cook a fresh meal so I get why you wanted to follow your normal routine. I often pick up whatever is quick or easy in the grocery store as well. It is usually cheaper and works well for when I don't have a lot of time. The frozen aisles are full of meals like that and I have been trying not to purchase as much of them lately.
Your breakfast sounded really good. I've been trying smoothies for breakfast lately and I find them very satisfying. Your meal sounds like it would be filling too. I have also been looking for new recipes online like you have. There are a lot that sound good that I wouldn't have thought of and I'm sure you've found some good ideas too. There are a lot of great sites to look at for recipes. One of my favorites is foodgawker.com because you can customize your searches. It sounds like you really opened your mind to new ideas and were willing to try new things. Good Job.

Hi Sophia! I would highly recommend looking at recipe videos on YouTube for simple meals. I have found it to be very useful. Good luck this week!
