Meatless Monday 3
For this
week’s Meatless Monday I was excited to have lots of nutritious food in my
apartment available. I was luckily
freshly stocked up on food by my wonderful mother who also happens to be an
avid health nut. Needless to say my
groceries were more exciting and of greater variety than usual. To start off my day I had some Greek yogurt
with almonds and craisins mixed in. I
also had an organic kiwi. About three
hours later I had a whole wheat English muffin with organic peanut butter and
an apple. Later in the day I had a small
bowl of tortellini and a salad composed of organic mixed greens, organic
carrots, Gouda cheese, avocado, and a vinaigrette dressing. Finally after my class that ends at nine I
had a snack of organic salsa from Wegmans and organic blue corn chips and a
couple Clementine’s. Overall, I really
enjoyed all my meals and felt pretty lively all day. I didn’t have much temptation to eat any
meat. It also was helpful that I was
able to be home throughout the day during meal times and able to prepare my own
food. My meal that was most affected was
my dinner because I sometimes include some kind of meat in that meal. I think that going meatless on Monday
decreases the meat I eat every other day of the week. It has a positive effect for the rest of the
week because I have learned more ways to eat a balanced diet through this
assignment and don’t think of meat as a necessity anymore. I think that I spent about the same amount of
money as usual because I ate so many fruits and veggies. However, there was more variety in all my
meals and better nutritional content than when I have a meat based meal. This week I don’t think that going meatless
affected anyone around me because I ate all my meals on my own. This week I really tried to use many more
fruits and vegetables than usual and to eat a variety. I also, was thinking about trying to fit in
nine fruits and vegetables into my day and I am happy to say I achieved my
goal! Through this experience I have
started to think about having a diet that consists of a higher intake of fruits
and vegetables and about trying to eat a variety of them as well.
It sounds like you did a great job this week! It's always great to have your parents stock up your fridge when they're around. I agree that it's great to have a variety of options for cooking. I've been trying to purchase more fruits and vegetables and find more uses for them. I've been getting a lot of great ideas online as well. Your breakfast sounded good, I love greek yogurt. I like to mix granola into mine. All of your meals and snack were well balanced with a lot of variety. Good job on fitting all nine servings of fruits and vegetables in! It takes a lot of health consciousness to reach that goal and you reached for real food. Your salad sounded really tasty. I've been thinking of more ideas on things to include in salads to make them interesting, and I love your choice of avocado. You also made a great effort to include more organic ingredients. You had five including your kiwi, peanut butter, carrots, salsa, and corn chips. I have been looking for more organic options and haven't included that many yet. I also think that the meatless mondays have decreased my meat intake throughout the rest of my weeks. It's made me realize that I don't miss meat in my meals, and I don't even have to think about it that much anymore. A lot of vegetarian meals have been delicious. It sounds like you are getting good at putting together meatless meals and keeping them nutritious.
ReplyDeleteIt’s always good to go home and then come back to school with loads of food from your parents! When I used to live at school that was always a good thing. I also think it’s awesome that your mom is a health nut as you say, and she sent you back with a variety of cool foods. Your mid-morning snack with the English muffin and peanut butter is pretty much a weekly, sometimes daily norm for me; although, I haven’t ever had organic peanut butter. I wonder how it tastes compared to regular peanut butter – I’d definitely like to try it! I think we might have pretty similar tastes because there’s a cold tortellini salad with spinach and feta that I love so much, so I’m sure your meal with the added ingredients would have been delicious. Also, I love those organic blue corn tortilla chips from Wegman’s! Something about them gives them such a better texture and taste than traditional tortilla chips. I also felt the same way about not feeling tempted to eat any meat and it helps a ton to have the time to be home to prepare, cook and eat your own meals. I’ve been having a little more time lately the past couple Mondays to be home and it’s made a world of difference in being able to eat right. I’ve also been trying to include more fruits and vegetables in general like you are, not just on Mondays. I like to try to follow the different colors rule by eating as many different colored fruits and vegetables in order to get different nutrients. Great job this week and on getting those nine fruits and vegetables!

ReplyDeleteI’m jealous of your meals! I will definitely have to take note on some of them for the future. I think that’s really good that your mom is a health nut. Having that reinforcement at home over the years has probably helped you so much not only with this project but in general. My parents always fed us vegetables growing up but they made it such a pain and I never used to like them. I wish my parents would come shop for me! That would make things so much easier. I also have some late classes like you and I never know what to eat for a snack afterwards. I’m always so hungry for a real dinner but never want to eat that big of a meal so late in the day. How did all the organic groceries work out for you? I bought a few organic items this week but they were a bit pricier so I didn’t get everything organic. I thought it was interesting that you felt less inclined to eat meat the rest of the week. I always feel like I need to eat chicken with everything. I was so happy over spring break with not having to create a meatless meal. I also liked that you set a goal for yourself with the amount of fruits and veggies to eat every day! I need to do this. I also feel that 9 is a lot considering I don’t even eat that many times during the day but I’m sure if I planned it out better I could do it. Good luck trying to keep that goal!
