For breakfast I ate my usual meal: yogurt with strawberries, blackberries, and granola as well as a piece of toast with some peanut butter and unsalted almonds and an orange. For a snack before lunch I ate a cliff bar. At lunch time I had a little bit of stir fry that I had left over from the other night. It was broccoli, corn, and onions in brown rice. For dinner, I decided to try and make the quinoa tabbouleh that we made at South Lake. I went to Wegman’s and was able to buy all the ingredients for relatively cheap prices. The most expensive ingredient was the quinoa which was like $3. The one ingredient I left out was mint and I accidentally got cilantro instead of parsley. In the end, the dish came out pretty good! The cilantro was a bit different but not bad tasting at all. It was my favorite of the dishes we learned to cook and I would definitely make it again at home. The bowl I made was pretty large so I was able to eat the left overs for lunch today and as a snack. Honestly, I liked the left overs a little better than when it was fresh. The only issue I had is that now I have a lot of the green onion and cilantro left over that I probably won’t be able to use before it goes bad.



            Like usual, only dinner was affected the most because that is normally when I eat meat and my cooking did not affect any of my roommates. In fact, one of them tried the tabbouleh and liked it. Going meatless did not affect any of my other days other than the fact I had leftovers which carried into today and the next few days.  I didn’t spend that much more money on this meal because everything was pretty cheap and in the $1 and $2 range. I used the recipe from class on this meal as a resource. I think next week I may try the stuffed zucchini or hummus. While preparing this meal I was thinking about other similar meals I could make with quinoa in the future. I have never had it before that cooking class and really enjoyed it as a substitute for brown rice.

    All of your meals sounded like typical foods that I would eat throughout the day. I must say eating a mixed parfait for breakfast is one of my favorite concoctions especially with all the different types of berries! Next time you should try putting flax or chia seeds on your yogurt as it gives more flavors and provides extra nutritional value. Your lunch seemed fairly easy and tasty. It’s always nice to eat one of your meals as leftovers from a previously meal, it definitely saves you time and the hassle!

    I’m very jealous you also made the quinoa tabbouleh that we made in class a few weeks ago… I loved it so much I even offered to take the leftovers home we had in class from Sowmya. Do you think the cilantro or parsley tasted better overall? I’m not a huge fan of cilantro but I can take it in little increments as long as it’s mixed with something else. I too enjoy eating the leftovers almost better than when it is fresh, something about it gives the food a different taste. Since you had extra green onion and cilantro, I would suggest using is in an omelet of some sort. Every time I have left over veggies I fry them up together on a pan and throw them in with eggs sprinkled with little cheese. Overall, good job preparing one of the class’s meals and staying on track! It looks like you didn’t spend too much money (which is always a downfall) and I look forward to see what you make next week. Best of luck :)

    I had a very similar start to my day. Instead of incorporating fruit with yogurt I sliced up fruits including strawberries and bananas into some oatmeal to add some sweetness to it. If you’re a person who enjoys bland oatmeal like I do you will like it much, much more by adding some fruit into it. You also had a cliff bar to which I hadn’t thought to have yet but those are so simple and easy to pack and take with you pretty much anywhere, that is something I will add into my meatless Mondays in the future. Your stir-fry sounded delicious. I’m not sure if you’re a fan of tacos or burritos but what I’ve done with stir fry is to add it into a taco wrap or burrito and add some salsa and sour cream to give it a little more of a Mexican flavor. That’s something that you might be interested in just to add a different dimension to your stir-fry. You also said that you mixed up your herbs in the quinoa recipe, which I thought was interesting because Sowmya said to experiment with different flavors and I might think of adding the same herbs to my recipe. You also said you might not be able to use the rest of your cilantro and onion and I would recommend trying to make another burrito or fajita recipe. I think those would go excellently in such a recipe. Just like you tried the recipe from our cooking class I think in the future I will try to make one of those on my own. You certainly had some awesome meals this week Cass!

  3. Great job Cass! I'm so glad that you liked the recipe! Brad- so great to know that you are incorporating flavors from spices! Kara- that's a good idea to use leftover veg!
