Meatless Monday #4

Today was the most hectic Monday so far which I thought impacted my eating schedule significantly. I had two tests, one at 1 p.m. and one at 7 p.m, giving me little time to study for each. On Sunday I had to work an 8 hour shift which gave me no time to prep my food for the next day (I usually do prepping Sunday nights if needed), and had to immediately start studying once I got out of work. I started off my morning with a vanilla protein shake mixed with almond milk, one banana, frozen strawberries/blueberries, and flax seeds. I brought my lunch with me since I stayed on campus all day (from 1 p.m.-9 p.m.). I went to the library right after my first test and ate a cup of low-fat cottage cheese with almonds and used multigrain crackers to dip in. For a little snack in between I also ate an apple and peanut butter that I brought with me. Considering that I wasn’t at home, I unfortunately had to eat on campus and bought a salad from Edgy Veggie. It consisted of mixed peppers, cucumbers, feta cheese, avocado, lite red balsamic dressing, and added extra eggs to my salad to add to my count for protein. My snack afterwards I ate a small vanilla Greek yogurt, grapes, and green pea snack chips. I recommend everyone to try them; they’re from Trader Joes and taste like Cheetos!
I was upset I couldn’t make any new recipes, especially Sowmya’s Green pea avocado radish sandwiches—that looked phenomenal! It was very inconvenient that I had two tests throughout the day and had to work an 8 hour shift the night before.  I spent more than usual, only because the $7 that I spent on the salad could’ve bought multiple ingredients that would’ve made me a few meals for the week.  This Monday won’t really impact other days of the week, but now I will have free time to buy ingredients, prep my food, and make sufficient meals. No meal was affected drastically since I either brought or bought my food, and my breakfast was a simple mix and go. This was definitely an off day for me considering all my obstacles that got in the way. However, I know the next few weeks I will not have any issues and I am planning my meals to be adequate.

    Sounds like week four was a success for you even though you hit some speed bumps during the day. I totally understand the problem of lack of time and juggling school and work at the same time. Also, having two tests on the same day is pretty tough. I hope you did well on both of your tests. I like that you started your day off with a breakfast protein shake. It is always important to eat breakfast, especially protein, before a test. Not going back to your room for lunch can be tricky as well. At least you brought snacks with you to keep you energized through out your hectic Monday. I also ate a salad from Edgy Veggie. I am always too scared to try the hard boil eggs on the salad, but maybe next time I will add them to my salad too. The real problem with Edgy Veggie is the price. I agree that those seven dollars spent on a salad could have gone a lot farther at a market like Trader Joe’s. You also ate green pea snack chips from Trader Joe’s. Those sound great and I will be sure to pick some up the next time I go to Trader Joe’s (probably next Sunday). I hope that your schedule for the next two Mondays are lighter so you can go back to cooking and trying new recipes like Sowmya’s green pea avocado and radish sandwiches. Keep up the good work!

  2. Hi Kara,

    It sounds like you still did great this week, despite your hectic day with all the studying and tests. I’m a big smoothie lover and you can never go wrong with all the ingredients you used for yours. I don’t know if you’ve ever tried or not, but if you’re looking to up your intake of vegetables, try throwing some spinach or spring mix in. Or even celery. The celery definitely leaves a distinct taste in the smoothie, but if you don’t mind it, that could be a cool option. As for the spinach, I can never even detect that I’m drinking vegetables and I always feel better about my day knowing I’ve increased my veggies. As for your lunch, I love having cottage cheese too! Ask anyone at my work; they always jokingly ask me where my cottage cheese is for the day if I don’t have it with me. It’s that common. I know what you mean when you said you weren’t at home for dinner so you “unfortunately” had to eat on campus. It can be tempting to pick something unhealthy, but I think Edgy Veggie is probably one of the best, if not the best choice to make. I admit I absolutely love their apple cider vinaigrette dressing; if you haven’t tried it, you really need to! Everybody’s been hyping up Trader Joe’s so I just need to find the time when I’m near North campus to go. Those green pea chips sound so interesting and if they taste like Cheetos, I’ll fall in love with them for sure. Great job this week!

  3. Nice job this week Kara! Maybe for a snack you can make Green pea avocado radish sandwiches sometime in the coming weeks :)
