Week 5 Brad

This Monday was exceptionally difficult for me to prepare anything nice to eat because I spent half of the day traveling home from a weekend trip.  Without time to prepare food and gather groceries to make food with the time I did have it was nearly impossible to have a gourmet meal to make for myself.  Many of the other students in this class seem to be pretty inclined in the kitchen but I however am not and tend to not be very creative when it comes to food choices or preparation either.
            That being said I started of my day in a bagel shop called Uncommon Grounds in Albany, New York.  If you haven’t been there and are around Albany I highly recommend it.  I got myself a poppy seed bagel with a vegetable cream cheese spread because I was trying to keep our assignment in mind.  Normally I would go straight for a bacon, egg, and cheese bagel.  I also grabbed a Greek yogurt, banana, V8 juice, and blueberry muffin for the road.  After 4 and a half hours and half my day gone I got home in time to make lunch and go to work.  For lunch I just made two PB&J sandwiches with strawberry jam and Wegman’s organic peanut butter because they are quick to make.  After I got out of work and class it was nearly 10pm and I was not about to make a nice dinner either so I threw together I microwaved bag of frozen broccoli and some brown rice, and macaroni and cheese that I found in the fridge.  It certainly wasn’t my best of Mondays but it was however still meatless!

    I hope you had a great time in Albany. I know how you feel about some days just being way more difficult to manage cooking a well planned out meal. I am taking 20 credits this semester and work about 18 hours a week so that's not an unusual experience. However I thought it was great that you still managed to go meatless even though you were traveling and so busy once you got back to Buffalo. I tend to think about a lot of those foods as very common foods to eat when you either are low on time or need to bring food with you like the bagel, yogurt, and peanut butter and jelly sandwiches. But, are also foods I never think about being vegetarian as well! Isn't organic Wegmans Peanut Butter so delicious! Also, even though you just through your dinner together quickly and didn't have much time to create something new it sounded like it would have tasted really good and had so very nutritional qualities as well! I enjoyed reading about your Monday and your rushed meals, as I have lots of those too!

  2. Brad,

    I saw that you had a very busy and rushed Monday this week and felt you didn't have time to prepare for Meatless Monday. Unfortunately, I've found myself in the same boat for this project a few times and I hear where you're coming from. I have also had to throw together whatever I could find due to lack of time or other conflicts that came up. I'm taking 17 credits this semester so usually my Sundays are full of homework or realizing that I have an assignment due during the week that I have forgot about and then I'm working on it all day and might not have time to go to the store.
    Sometimes I also feel that I am not the most creative person in the kitchen especially when my choices of food are limited, like no meat. For me, when I can't come up with something to make on Mondays I will use the internet and go on YouTube to find some recipes that are meatless, taste good and easy to cook (because I don't like spending all day in the kitchen). You could also just start browsing the Internet because there are so many recipes that can be used for Meatless Monday, if you are stumped on what you want to make. I still like how you managed to eat several times even though you had some obstacles plus you went meatless too so that was pretty impressive.
