This week meatless Monday was a bit easier because I had planned out what I was going to eat on Sunday. It was a great thing I did so because I did not have enough time to go food shopping so I was low on food. On Sunday I made peanut butter and jelly sandwich to bring to school. Making my breakfast Sunday night has saved me a lot of time. I’m thinking of making food the night before class so I can wake up later and eat healthier. For lunch I got a spinach caesar salad with eggs, onions, avocado, corn, and mozzarella chess from Edgy Veggie. Lastly for dinner, I made rice with lima beans with lemon pepper sauce and fried eggs.

None of my meals were affected and it did not impact other days of the week for me.  I did have some left over from dinner so I didn’t have to cook dinner on Tuesday. I also did feel healthier while doing the meatless Monday challenge. I spend less then I did on week 2 so that was good. Going meatless Monday is not as hard as I thought it would.

  1. I hope you enjoyed your break. I have found that planning out meals is the best way to save time and money. I plan out all my meal now because it really does save me time and money . Then thinking about what I am going to eat for each meal. I like that you made a sandwich for a meal. I have been trying to think of a good to go meatless meals and it has been really hard. I have only come up with a cheese sandwich. I would also like to start preparing my meal at night I think that is a very good idea. It would save me so much more time. Some days I even go without breakfast because I just don’t have the time for it. I know that is so bad. Also I love having left overs it’s like the best thing in world to me. I don’t have to cook and it food just ready for me to eat. Your picture looked very good. I have to try and make fried rice now because it just looks so good. I was wondering if you fried the rice first then added the bean or you just fried them together. Either way you did a great job. After doing this for the third time it is starting to get easier for me. When we started I thought I was not going to be able to do it. I’m working on it for the benefits of the planet.
