Monday I was running late therefore for breakfast I had a
yogurt with a banana. Wasn’t much but it kept me running until lunch. By lunch
time I was starving!! Stomach was growling and I was craving for a well done
steak with shrimp broccoli alfredo! A chocolate molten cake for dessert with a
nice cold pink lemonade on the side. But it didn’t happen because it was
meatless monday. So therefore for lunch I had a cheese quesadilla with no
chicken. Also had a caesar salad with water on the side. It wasn’t that bad, it was actually
fulfilling. I then went to my 6 - 840 pm class. Class ended early; really
early. The projector was broken so she gave us back our midterm and let us out
right after. Since class was release early I then got back home earlier than usual.
Right in the middle of my cousin cooking dinner. So I helped him cook dinner.
Which was delicious and probably one of the best meatless monday meals I
had. The meal was tofu with potatoes
covered in his special ingredient sauce and mixed vegetables. He also used his
juicer and made natural 100% fruit punch.
Dinner affected me the most because it put me right to sleep! Monday was
a good day.
Light Description of the Dinner (in the picture)
To the left at 9o’clock , you have tofu that has been baked
and then sauteed in olive oil,tomato paste,garlic and onion sauce. Above at 12
o’clock and also at 3 o’clock , you have a Haitian yam( not the sweet yams or
sweet potato Americans are familiar with) patate ( a white flesh sweet potato)
and a regular potato. They were boiled in water slightly salted. Then they were
served also covered with the same sauce that tofu was sauteed in. The tofu is
firm tofu.
