This Monday was tricky as I was traveling back to Buffalo from vacation in Cancun. I woke up late as I was still trying to get rest from the plane so breakfast for me started late. I had my first meal at 12:20pm my mom bought me a toasted bagel with cream cheese and a Snapple. My second meal my mom prepared for me she made steamed broccoli, cauliflower, and string beans, a green salad with cucumbers, avocado, and corn topped off with French dressing. After that meal I was doing run-arounds trying to pack my bags and get ready to head to the bus station. For dinner it was harder because my mom has to cook for my brothers and there was no way they was going to pass up meat. So I had to make my own meal. I prepared some pasta using my brother’s recipe. I first boiled the spaghetti once they were soft, I drained out the water. Then while the spaghetti was still in the pot I added two spoons full of butter, two spoons of sour cream, and half a bottle of Ragu tomato sauce. Stir it all together while the heat is on low, I also boiled up a sweet plantain to have on the side.
            Dinner was the most affected because my brothers wanted to eat meat and so I had to prepare my own meal usually my mom would just cook one dish for us all. This Monday did not really affect the rest of the week. In all honesty meatless Monday is not something I look forward too, it’s actually a burden for me. I feel like because all the food around me has meat it’s hard to prepare something without meat.

            The only meal I spent money on was for breakfast. Everything else was made in my house so that was a plus. Usually if I was in school I would’ve have to have spent more money to find a meal without meat. I was able to use the produce and food already in my house which was best. I was glad I was home this Monday and my mom was able to cook lunch for me.

    I hope you enjoyed your vacation! Canjun sounds like the best place to escape the cold weather of buffalo! I hope the weather gets warmer here! As far as meatless Monday this week, I think we are in the similar situation. I also had a tough time eating meatless during dinnertime especially because dinner is a time when the whole family eats the same meal. The meal that is prepared is usually contains meat. Fortunately, this Monday my mom had prepared an additional vegetarian dish for me. For the past meatless Mondays, I had cooked a separate meal because my family members were eating a meal with meat. I really think your brother’s recipe is interesting! And I wish I had tried those ingredients for the pasta I had made yesterday. Maybe next time, I cook spaghetti I will try those ingredients.
    I understand that it is difficult on Monday to go throughout the day eating meatless. I guess we both just need to start planning beforehand just to avoid any temptation that goes toward eating meat. I tend to pack a few things to eat throughout the day to avoid spending money on a meal that I might not be a complete fan of. It also is nice to have that meatless alternative while everything on campus feels to be having place that sell meals with meat products. Overall, I think you did a great job! I loved that the meals had varieties of food products in it. Good luck with the following meatless Mondays!
