This week for meatless Monday I ate:
Breakfast- yogurt and coffee
Lunch- salad with lettuce, tomato, cucumber, mozzarella cheese
Snack- apple with peanut butter
Dinner- spaghetti squash with broccoli and tomato sauce
Monday’s I don’t go to campus at all so it wasn’t hard to not eat meat. I wasn’t tempted to get anything with meat from campus. I bring my lunch and breakfast to my internship so I made and packed it all the night before.
The meal that was most affected this week was lunch. Usually I make salads anyways for lunch to bring to my internship but I usually put grilled chicken in it or turkey deli meat in. Instead, so I would be full I just put extra cheese in my salad. I also ate my breakfast and lunch closer together before I left my internship for the gym so I’d stay full.
            Meatless Monday didn’t impact the other days of my week really. I did have left overs from making spaghetti squash because a squash is so big, so I ate those the next two days. Other than that I didn’t go grocery shopping at the beginning of the week for more vegetables so I had to continue eating what food I already had.
