This week for meatless Monday it was easier than last week in terms of finding things to eat and actually eating.
For breakfast I had a bowl of Fruit Loops with a protein shake.
For
lunch I had a fruit salad comprised of apples grapes and oranges. it
was very good and was the first time I had a fruit salad in a long time.
After I ate that I finished my penne with broccoli from last week. It
was still really good.
Then for dinner I wasn't really sure
what I wanted to eat because i was at work so I had a small bowl
of beans and greens soup to hold me over while I thought about what I
wanted. when I finally made my mind up I went with stuffed banana
peppers that were cooked in a wood fire oven. the picture is before
I put them in. I put a little olive oil on top and added some diced
tomatoes. They were a nice change of paced from always eating pasta.
Doing
meatless Mondays was definitely a experience. The hardest part was the
first couple weeks trying to adjust myself to not eat meat and then
actually doing it when most of my meals have some type of meat in it as
the main portion. Hopefully I can either keep this going or try and get
my mom and other people to at least try it and see what they think of it
and explain why they would be doing it.
