Breakfast: 2 hard-boiled eggs
Lunch:
salad- lettuce, tomato, cucumber, mozzarella cheese
Snack:
apple with peanut butter
Dinner:
spaghetti squash with butter and cheese
Since this was the
last meatless Monday, I actually tried to plan some meals compared to the last
few weeks. My roommate usually makes a bunch of hard-boiled eggs for the week
so I ate that for breakfast. For lunch I just made a salad because I bought a bunch
of vegetables for the week. For dinner I decided to make something I already
made because I wanted left overs for the week and I really liked last time I
made spaghetti squash. I’ll probably eat more veggie meals this week since I
bought a bunch of groceries and I don’t want them to go to waste.
Doing
the meatless Mondays has made me realize how easy it is to make a meal without
meat if you plan ahead and really think about what you’re going to cook.
Overall I think this was a good experience to make the class consider doing
meatless Mondays on our own.
