With this week being the first
meatless Monday I have to say I was a little lost because I had not planned
ahead at all. I commute to school and
live at home so I have the convenience of reaching right into the refrigerator
and grabbing whatever is handy. Today
however because of meatless Mondays was not so easy. I started off with my usual eggs for
breakfast, which I have nearly every day.
After that though my day became a scramble of whatever I could find that
wasn’t the chicken that was in my fridge that had been baked the night
before. For lunch I was on the go so I
threw together a quick protein shake with a bag of mixed nuts. The bag
contained almonds, walnuts and peanuts and I also grabbed two bananas that I
saw laying on the counter. I definitely
noticed that because this is a way I do not normally eat that I was struggling
to find foods that went well with each other and were quick to throw together, which
is necessary being on a college schedule.
My parents usually have an assortment of vegetables in the house, which
made dinner easy to throw together when I got home. I took all the vegetables that I could find
and diced them up. I had a nice bowl
full of diced up carrots, broccoli, cauliflower, tomato, and a little
onion. I decided to stir fry the
vegetables together with some olive oil because that was the one easy thing I
took away from our field trip. Overall
it was an interesting first meatless Monday but I made it through it. I realized quickly though that the
preparation to eat this way and have the food taste good would take more time
than running by Tim Horton’s for a Bagel BELT.

ReplyDeleteI completely understand how you feel about struggling to find foods that are easy to put together and taste good at the same time. Living on my own it made it a little easier to plan what I was going eat for the day. I like to shop one week at a time so knowing that we had meatless Monday coming up I tried to plan out what I was going to eat the best I could. With this being said I still almost forgot that it was meatless Monday and still reached for the bacon in the morning. I believe that if we both take time to prepare the week before we will be much better off with finding foods that are meatless and go good together. I also used the internet to try and find some good recipes that would be easy to make and taste delicious. The toughest part of the day for me as well was lunch. I wanted something quick that I could take on the go just as you did. I think for next week I am going to cook something the night before and bring it with me to school in Tupperware. I feel by doing this we both can be more successful with getting all the nutrients that we need and become fuller throughout the day. Glad to see that both of our first meatless Mondays were a success, but we both still have room to improve on next week.
