This week’s Meatless Monday started
off with a bowl of chocolate Chex cereal with a serving of fat free milk. This
is a typical breakfast that I know wakes me up without the caffeine of coffee.
For lunch, I ate a serving size of fresh mozzarella balls, Sabra hummus,
carrots, and pita chips. For snack, I ate a clementine to hold me over until
dinner. For dinner, my roommate and I went to the restaurant Saigon Bangkok. I
decided to order from Saigon Bangkok’s gluten-free and vegan menu. I ordered
the vegetarian roll, which is stir-fried
shredded vegetables with bean curd wrapped in steamed rice paper & served
with house special hoisin sauce”. For the main course, I ate Tofu Pad See Ew,
which is a Thai dish that is made with wide rice noodles, broccoli rabe, zucchini,
baby corn, tofu, egg, and soy sauce. The meal was delicious, nutritious, and
meatless!
Dinner
was my most effective meal. I felt full, energized, and motivated to experiment
with tofu in my own kitchen. Before dinner, I didn’t have enough energy so next
week I will incorporate more protein for my lunch meal. I spent about the same
amount of money for meatless Monday and a normal day. Meatless Monday has not
affected anyone around me so far, but I am hoping that my roommate will try to
go meatless for one Monday. This week, I used Saigon Bangkok’s website to plan
ahead for dinner. I knew that the restaurant had a vegan menu, so I explored
the menu online before going there for dinner. Since I want to experiment with
tofu in my own kitchen, I have started looking for recipes online that are
quick, simple, and delicious. I also spoke to a friend of mine who is vegan. I
asked her about ways to make tofu at home. She gave me some pointers and ideas
of what she makes with tofu. I feel confident in trying to cook tofu in the
upcoming weeks. I will also try to incorporate kale into my future meatless
Mondays.
