For the first week of meatless
Monday I wanted to see if the food I already had in the pantry and the food
that I usually eat could be turned into vegetarian easily. It was actually
easier than I anticipated. I didn’t eat breakfast that morning because I didn’t
have time before class. Here is how my breakdown went:
Lunch
Grilled Cheese
sandwich and a bowl of buttered noodles
Snacks
Quite a few
mandarin oranges (probably 4 or 5) and I did find some goldfish so I couldn’t
resist and ate those too
Dinner
Slow cooked a
vegetarian chili that consisted of pinto beans, black beans, small red beans,
kidney beans, corn, peas, an onion, a green bell pepper, 3 cloves of garlic, a
can of diced tomatoes and a can of tomato paste
My dinner was the meal that was most
affected. I usually don’t eat much meat until dinner but hardly go without it
when I do have dinner. I do have to say the chili was very good though. But
Meatless Monday this week will probably not affect the rest of the week because
I made the chili with another housemate of mine and another joined in to eat
later. The 3 of us ate most of the chili
so there wasn’t much left over. So in a way eating the chili affected others
around me because of the fact that a few of us ended up eating meatless that
day sharing the chili and making that our big meal of the day.
I didn’t spend any more money or any
less money than I usually would. This is because I don’t buy my meats. I use
the meat that has been harvested from animals during hunting season and I store
those for the year so I really don’t have a reason to go buy meat. As I said
before I wanted to see what I could make with what I already had so this week
was easy. Next week will be more complicated though because I really don’t have
any great ideas for a dinner yet that will be something new and
interesting. I did find out that eating
meatless (for at least one day a week) is not all that difficult for me to do
which is actually kind of encouraging.

Great job on week one! Sounds like your first week was a success! I like how you used the food that you already had in your pantry. I always buy food and it sits in my pantry because I usually forget to use it. Breakfast is usually rushed for me so I can relate to not having much time in the morning to eat. Grilled cheese is always a great idea. Maybe next time try to incorporate some sort of vegetable during lunch. Tomato soup works well with grilled cheese and is also delicious. I ate clementines as my snack as well. Sweet fruits are great to snack on. Do not worry, it is okay to have a few goldfish. They are not considered meat, so you are fine! Your dinner sounds amazing. I hope you enjoyed it. How long did the chili cook for? Do you have any tips for making it? My plan for future dinners is to look online for meal ideas. That may also help you with cooking more meatless dinners. It's always great to have somebody to cook with. Do your roommates plan on continuing meatless Mondays with you? Even though it was meatless chili I am sure it filled you up. I think that next week your goal should be to incorporate more vegetables during the day. Carrots, cucumbers, and zucchini are some of my favorites. Hope that the next few meatless Mondays are a success for you.
