Week 2 Robert
Today is Monday March, 10, 2014 and is our second meatless Monday of the semester.  This week I actually remembered that it was meatless Monday and the Sunday before I prepared for it. This worked tremendously well for me compared to waking up on Monday and winging it. I felt way more prepared for today compared to last week as well. When I woke up I knew exactly what I was going to make throughout the day and how and when I was going to do it. When I woke up I had an orange then went to the gym. Upon getting back from the gym I had some eggs with brown rice and lots of vegetables in them a few include; spinach, peas peppers and green beans. To spice it up a little I put some franks hot sauce on it. I also had a protein shake to wash everything down.
For lunch I kept it simple and had a peanut butter and jelly sandwich with some humus and crackers for a side. I only had this because I had run out of time in between classes and had to go back to class. During class however I had another orange. I also had some unsalted nuts mixed with sunflower seeds as Sowmya had mentioned in the previous class. Having this quick snack ready to go on the counter made it way easier for me to grab one as I was on the way out of the door.
For dinner I had an odd combination. What made it so odd was that it was left over salmon I had made on Friday and macaroni and cheese. I had the salmon as I was making the mac and cheese and I must say it tasted much better on Friday when I first cooked it. After dinner it was back to class until 10. I tend to get hungry around every 3 hours so I knew that I had to bring another snack. So for this snack I brought an apple and another mixture of nuts and seeds. I feel this week was much better than the last and also feel that it went much more smoothly than the previous week.

    Good for you on doing better this week! I almost forgot about the project too but was able to plan ahead of time. This past week I basically made the same dinner as you did for lunch, the brown rice with eggs and lots of vegetables. I have never thought of putting spinach in the rice, was it really good? I should probably buy spinach for a different week since you could add it pasta too which could be good. That was also a good idea with the oranges; after having the clementine’s in class I started craving them at home but forgot to buy a bag for myself. One thing I liked that you did was pack snacks for class. I never think to do that so at the end of the day I end up spending more money because I buy food at school or I will come home and eat a massive meal that I didn’t really need. Once I’m really hungry I feel as if I am more likely to eat a lot of bad food because I will want whatever is ready the fastest. I have some unsalted almonds at my apartment that I put on toast that I keep meaning to bring to class but always forget. I also have apples that I forget to pack. The next week I should try to pack everything, even snacks, for the entire week. Now, I saw that you ate salmon for dinner. Isn’t that a meat? I know some people are pescatarians and only eat fish but no other meat. The one thing I am going to copy you on is the mixed nuts for future Meatless Mondays ahead! Good luck next week.
