Meatless Monday Wk. 2

I have to start off by saying that
I failed this second meatless Monday however I did my best to redeem myself. I started off the day by not even thinking
about this assignment. I woke up groggy
and the first thing I did was make a pot of coffee and throw some eggs and
bacon in a pan on the stove. Not long
after eating the bacon I was preparing to make my lunch to take with me to work
and I realized that I had messed up the day.
However to make up for my failure I decided to put together what I had
gotten over the weekend. I took some of
the ideas that I liked from our field trip and went to the store ready to get
some nuts, fruits and vegetables for an awesome salad. I took a bag of mixed greens along with some
walnuts, almonds, apple and clementine to make a delicious salad. I packed some balsamic vinaigrette with me to
put on the salad as well. I had a protein
shake after I worked out to tide me over before dinner. For dinner I wanted to make something sweet
and easy and nutritious that I’ve had before.
I made some Almond flour pancakes, which are lower in carbohydrates and
still taste delicious. All you need to
make them is everything you would use to make normal pancakes from scratch
except you use almond flour instead of white flour. I also prefer to use coconut oil instead of
vegetable oil due to the health benefits associated with coconuts. Later tonight I plan to use the rest of the
fruit I got as well as some Greek yogurt and milk to make a nice smoothy, which
will finish off my day. Although I
obviously started the day off poorly with eating the bacon but my goal from
there was to finish the day as best I can and do better next week.

ReplyDeleteI really think that you did a great job in salvaging the day! Even though it started off poorly you were conscience enough to make the switch and do what you could to turn it around form that point on. The idea you had for the salad was awesome! I am going to have to try that for my next week. I think that if you add a different variety of things to a salad each week you cannot get sick of it, I have a tendency to get sick of things after a while of eating it often. The other thing that I really enjoyed that you did was to make a smoothie. I have never even thought about making smoothies. They are so simple and easy to make that it would be dumb not to have one at night for a late snack. I read online somewhere that people even put some protein powder in them as well, just another good way to get some protein in our diet. What fruit did you use in your smoothie? I feel that I would have trouble finding combinations that would taste good together. I have also heard of people putting spinach in their smoothies. Have you ever tried this before? I am curious of what it might taste like. I guess next week I will have to try out some different smoothie options. As I had said early good job on turning your day around and accomplishing the second week of meatless Monday’s.
