Meatless Monday 2
This week
for Meatless Monday I was lucky because I didn’t have class until 6:30 pm, this
enabled me to make all of my meals for the day at home. I found this to be very helpful because I
don’t have any meat in my apartment so my options were all vegetarian to begin
with. This was definitely less tempting
then when I’m on campus and always want Chicken Souvlaki from Rachel’s.
To
start off my day I had a wheat bagel toasted with peanut butter, a Clementine,
and a few pieces of fresh pineapple. For
me this wasn’t too out of my usual breakfast routine. Although I do love to make eggs a lot,
especially since I don’t buy meat often and they are a great source of
protein. For a snack a couple of hours
later I had a handful of baby carrots and a chocolate chip cookie (they are a
major weakness of mine). At around four
I was hungry again so I had a black bean veggie burger with pepper jack cheese
melted on top and hot sauce on the side.
Around this time I also ate a serving of crinkle cut French fries that
were baked in the oven with some Ketchup.
This was a little bit of an unhealthy snack for sure but I saw them in
my freezer and realized that they were going to expire soon so I didn’t want to
waste them. Since, I have class till
9:15 at night I wasn’t able to eat a real “dinner” instead at around 9:45 when
I got home I had two Clementines a few slices of pineapple and a handful of
almonds. I know this wasn’t necessarily a
dinner but I don’t like to eat full meals after nine o’ clock at night so I had
to improvise. And because I had such a
late lunch I wasn’t as hungry as I usually am by the time I get out of class.
Overall,
my Meatless Monday wasn’t difficult at all especially since I was sure to buy
lots of fruit over the weekend. I
thought that the corn quesadilla recipe looked absolutely amazing and can’t
wait to try it sometime this week when I don’t have a night class. Next Meatless Monday I plan to organize my
schedule so I am able to cook a meal around 5 o’clock and then eat an early
dinner before my class. This way I will
be able to try a greater variety of vegetarian recipes that require a little
bit more work than my usual meals. I
also, plan to make the meal with one of my roommates or my boyfriend so they
can try the recipes too!
