Cass week 2
This week for Meatless Monday went better than last week.
For breakfast I ate my usual: yogurt with some strawberries, raspberries, and
granola added in as well as a piece of toast with a little bit of peanut butter
and almonds. For lunch I ate a bagel with cream cheese because I was on the
road back from Rochester.
For dinner I made some brown rice with onions, peas,
broccoli, corn, and egg with some stir fry sauce. Snacks during the day
included an apple and then carrots with a little honey mustard for dipping. I
also have gotten into the habit of just drinking water with some lemon and lime
during the day besides the occasional coffee.
The meal that was most affected was dinner
because that is usually where I eat the most meat. On my regular schedule I can
find something for lunch that doesn’t include meat but I almost always eat some
type of meat for dinner, especially chicken. So far no, going meatless
yesterday did not impact how I ate today.
I really didn’t think Meatless Monday
was very challenging because I did not make some crazy meal, I just simply left
out chicken from one of my normal meals. The one thing I did change were my
snacks during the day and how much I had. I normally don’t eat that many snacks
and its usually just a granola bar or a small bowl of oatmeal. I felt more
inclined to eat a smaller snack and make sure they were some type of fruit or
vegetable because of this project. Going meatless did not affect anyone around
me since I cook for myself.
Also, all the food I ate was stuff I already had so
I did not spend any more money than usual.
I usually enjoy fruits and vegetables daily, just not as much as I
probably should. The one thing I want to do for the next week is make a brand
new meal that I have never tried before. I will be gone for a week for spring
break so I didn’t want to shop this week and get a lot of food that I won’t
finish before then. But the first week back I want to plan a new meal that
isn’t just rice and vegetables.

ReplyDeleteI had a similar experience on Monday as you did as far as feeling like I needed to snack on something like a fruit or vegetable. This ended up resulting in me eating a ton of Clementines and carrots. Although these are both healthy and delicious I am looking forward to trying new vegetarian snacks and meals that are a little more creative. I thought the stir fry you made looked simple, cheap, and delicious and look forward to trying it out sometime. I definitely can relate with you on the whole enjoying fruits and vegetables daily, just not as much as I probably should thing. I love fruit and some vegetables however, I have trouble dreaming about carbs when I'm really hungry and usually having limited time to prepare a meal. I do plan to try Sowmya's recipe for corn quesadillas though because it looked amazing I will just have to prepare more when I grocery shop next time. I have not ventured out from my usual meals on Meatless Monday like I should, but after break I plan on working harder to try new recipes and maintain a balanced diet. Also, trying to add more spices and veggies to meals I already eat regularly is a goal I have made for myself for after break. I really enjoyed reading about your Meatless Monday experience and felt similar as you did in many ways about my experience on Monday.
