Meatless Monday #2

For our second Meatless Monday, I tried to eat more often throughout the day as Sowmya recommended. Since I didn’t have to go to my internship this Monday, I was able to eat breakfast since I woke up later and actually had an appetite. I had iced coffee and rice cakes with peanut butter for breakfast, three clementines at various times throughout the day, hummus with Stacey’s pita chips for a mid day snack (had to buy those pita chips after class Thursday – thanks Sowmya!) and also had a non fat chai tea latte from Starbucks. For dinner, I made Chickpea-Brown Rice Burgers from the “Meatless” cookbook by Martha Stewart. I couldn’t resist purchasing a copy for myself after we went on our field trip. As a resource for directions with soaking and cooking the chickpeas, I used the folder of papers that we received from the field trip. Again, dinner was my most affected meal. I chose to make these Chickpea-Rice burgers because it was something that I had never tried before and was slightly challenging. I spent the same if not less money on groceries this week.
Again, my
going meatless didn’t affect those around me since it is a normal behavior for
me. This week I had the thought that I
would like to try a completely vegan day next Monday to take everything one
step further. I’d like to go a day without dairy and eggs!
To reduce
food waste, my boyfriend and I used the large amount of cooked chickpeas we had
left over to make roasted chickpeas in the oven. We will keep these to snack on
through out the week!
Also, as a
side note I was able to try Chipotle’s tofu at the Niagara Falls Blvd location
on Sunday this week! It was absolutely delicious and I definitely recommend it
to anyone trying tofu for the first time!

ReplyDeleteI am glad that you made the effort to eat frequently. This is something that I really struggle with. As a result of my schedule, there are many days that I do not eat at all. Then, when I come home, I either eat a huge meal or binge on every snack in sight. I enjoyed your food selections. I used to eat rice cakes all the time in high school, but since college, I have ceased to indulge on these tasty treats. You successfully made me crave them. I will be buying them next time I am at the grocery store.
Also, I love that you purchased “Meatless”. When they passed it around at the field trip, all the recipes looked delicious. Pictures always make my mouth water. That’s why I thought that that book would be perfect for me. I wanted to buy it myself, but this past week my debit card was canceled (due to identity theft) and thus had no money. I do plan on acquiring it soon, though. The picture of your chickpea brown rice burgers looked delectable. I too had chickpea burgers, but mine were pre-prepared (Morningstar). I bet yours were much much better. Home-made is always the way to go. Have you tried any other recipes in the book that you would recommend?
I thought it was kind of interesting that you are so waste-conscious. I commend you for that. I am notorious for making huge portion sizes and wasting leftovers. I have never heard of roasted chickpeas. When you bake them do they harden like a chip? Also, do you season them with anything before you bake them or do you just leave them plain? I would love more information on this. I am a huge fan of chickpeas, and would love to try new things with them.
