Meatless Monday Week 2

Week
two of Meatless Monday was another success in not eating any meat
products. I had gone shopping over the
weekend and was prepared for what I was going to make for the day before hand. Here is how the breakdown went for food for
this week:
Breakfast
Bowl
of Honey Nut Cheerios with fat free milk
Lunch
Stack
of pancakes with a little honey and a little syrup over them
Snacks
A
couple apples, oranges, and some cubed cut pineapple
Dinner
Corn
and potato chowder made with just a few simple ingredients. All of the
ingredients include 4 cups of corn, 2 1/2 cups diced potatoes, half of a large
onion diced, 2 cups of fat free half and half, 2 tablespoons butter and black
pepper and celery salt as spices. And I
also had some fresh French bread from the store to dip into the chowder. To thicken the chowder all I do is take about
half the potatoes and mash them to avoid adding a lot of fat.
Throughout the day I
was snacking on the apples, oranges, and pineapple because I had made a platter
earlier in the day. It made it much
easier to snack healthier because the fruit was already prepared and all I had
to do was eat it. And for that reason my
snacks were the most affected part of my day.
I have never really made a platter of fruit before this and usually
would just go for the easiest snack available because I don’t want to cook
anything or have something that even takes 5 minutes to make. You just want it now with no effort. And
having a platter made that easy. This
week I ate everything by myself and didn’t really have an impact on anyone
else. After the chowder I was really
full and actually had finished it later in the evening as a second dinner. I only
ate some of the bread having about 3 thicker slices. Everything that I bought for this Meatless
Monday was wallet friendly and not difficult to make. My wallet is not very
deep to begin with so making food that is easy and affordable is what is best
at this time. Making affordable meals
everyday is a staple of mine because I don’t really go out eating ever and
cooking in the kitchen is something I do at least once and most of the time
twice a day. I believe cooking is a good skill to have and can be enjoyable
too.

ReplyDeleteI'm glad you were successful in avoiding meat products for your second meatless monday. I however was not nearly as successful as you. I started my day off all wrong by accidentally eating bacon before I remembered our assignment. I noticed that you took Sowmya's advice to bring fruits with you to snack on throughout the day. I didn't remember to get to the store to get fruits ahead of time but I will be sure to next week. I could definitely see the benefit to having those already prepared and with you all day just to stay full and satisfied throughout the day. I'm glad you shared the ingredients and recipe from your chowder because that seems like something that I would also be interested in doing. Did you end up make a big pot of the chowder and keep it in the fridge to have throughout the week or did you make just enough for dinner for that night? Like you I also enjoy cooking when I can and have the time. Making easy and affordable recipes is fun when you have the knowledge and cooking base to do it. I like how you had a simple breakfast and a simple lunch too. On both Mondays so far I have found myself searching for these complex meatless meals almost like I can't think of anything that doesn't have meat in it. The fact is though that there are so many meatless options and the best way to find out what they are is to learn from each other and experiment with our own favorite meatless foods. Last week in class we learned about the spices which is another thing I will be using to mix up my food flavors each and every day.
