Meatless Monday Two

            This second week was a little easier to do because I wasn’t worried about what it would be like.  I knew that it wasn’t that difficult the past week so I was more confident.  For breakfast, I had a Special K Hot Cereal bowl.  It is a multi-grain oatmeal with quinoa, dried cranberries, and almonds.  They are very satisfying and filling for me.  I also ate a banana a little after this.   I always try to eat breakfast because if I don’t I tend to get hungry when I go to campus.  After class I got a medium coffee at Starbuck’s because I was feeling tired. 
            For lunch I wasn’t at home so I couldn’t cook.  I was at the mall running errands and got hungry so I ate at Auntie Anne’s.  I know that it is not the healthiest choice, but I always crave it when I see it.  I ate a salted soft pretzel with a small lemonade.  When I got home I needed a snack so I ate a string cheese stick. 
            By dinner time I was pretty hungry so I decided to cook.  My boyfriend and I made latkes which are just shredded potato pancakes.  We made them with shredded potato, onion, egg, flour, salt, pepper, and a little parsley.  We ate them with a little sour cream on top, and they were very tasty.  They were also very filling so I did not prepare them with anything else.  This was the first time I had made these before, and they turned out really well.  They are just fried in very shallow vegetable oil.  The only thing that made them difficult was the fact that a lot of water had to be drained out of the potato. 

I found that this week was much easier to try, and I wasn’t craving any meat in my meals.  I often go through my days without eating meat and not realizing it because it takes more time to prepare.  I think it will be easier to cut down on meat throughout the rest of my week now as well.  Starting this on Monday gives me a better outlook on it for the week and makes me more conscious of it.

    I’m glad to see you found your second meatless Monday to be easier than the first! It definitely takes time to adjust your eating schedule, and having to watch what you consume can be difficult. I agree with you that breakfast is important, especially a healthy and filling one. Your choice of Special K with the nuts and berries was a great way to start the day, because of it’s high vitamin and mineral content. As far as lunch, I don’t blame you for indulging in Auntie Anne’s, their pretzels are so good. Even though it wasn’t the healthiest choice, you were able to recognize it’s lack of nutritional value and eat healthy for the remainder of the day. Your snack choice definitely made up for your lunch, bananas and cheese both have nutritional value and can be a great way to remain full for a period of time. Your dinner of latkes sounded delicious! I’ve had them many times before and can attest to the fact that they are filling once you have enough of them. You should try sweet potato latkes next! They are amazing! It’s interesting how we try new things when we cannot have what we are used to. While not eating meat was difficult at first, I agree that it becomes easier and almost habitual over time. You make a valid point: it takes more effort to make a meal with meat, and sometimes, there’s just no time for it.
