Monday week 4 (3/31/14)
This week for meatless Monday I
started the day with a bowl of chocolate Chex cereal with fat free milk. Then I
ate some pineapple and a clif bar for snack. For lunch, I went to edgy veggies
and got a salad. My salad was made of spinach, fresh mozzarella, cucumbers,
cherry tomatoes, tortilla strips, dried cranberries, and apple cider
vinaigrette. It was delicious and a great way to get different vegetables into
my day. A few weeks ago, I ate Pad Se Ew at Saigon Bangkok. For dinner this
week, I decided to experiment with tofu and make my own version of Pad Se Ew. I
found a recipe online that was simple and had great reviews. The dish was made
of tofu, rice noodles, soy sauce, broccolini, fried egg, and brown sugar. I
think I might have cooked the rice noodles wrong because they were extra
sticky, but other than that, I enjoyed making and eating this dish. The recipe
made four servings so I shared with my roommate and boyfriend.
They both
enjoyed the dish as well. For dessert, I treated myself to Yotality, a frozen
yogurt shop.
Sunday night, I prepared for this
week’s meatless Monday. I went to Trader Joe’s, which has become my new
favorite store. I am still surprised at how little I spend each week there. This
was my first time making Tofu. I found it just as easy as making chicken. I am
glad that I experimented with a new type of protein. I plan on making more Tofu
dishes in the future after I do some research on other possible dishes. Week 4
has been a success!

ReplyDeleteI love Edgy Veggie! I always go there when I have to eat on campus rather than Tim Hortons or Moe’s if possible. They have so many different salad options, I always like trying new ones. I’m always afraid to try new dressings though because I don’t want to dislike the flavor. I also really like that a lot of their salad options are locally grown rather than imported from far away. They support local farms in the area and we get the best ingredients out of it.
Where is the restaurant Saigon Bangkok? It sounds delicious in general and would love to try it sometime. How easy was it to cook tofu? I’ve only had it a few times, one being at the cooking class in the chocolate and the other time being at Chipotle. The Mexican tofu at Chipotle was awesome, it had great flavor and wasn’t a weird texture like I was expecting but I always hear people complain about cooking it at home. I hear the flavor and texture of it can change a lot if you don’t know what to do while cooking it. This makes me scared to try it! Since I do not eat it ever really, I wouldn’t know how to make sure its cooked right. It looks delicious in your meal however. As far as the noodles go, I am sure you can find some tips online with how to make them not sticky. They sound delicious so I might try to make a meal out of them sometime. Also, I love Yotality so much! Good luck with your future recipes.

Excellent job IIana! Here's a way to cook rice noodles: Soak noodles in cold water for like 30mins to 1 hours, drain and then when the base of your stir-fry is done (all the veggies cooked/tofu/seasoning) Add the soaked and drained noodles over the veggies and toss. Add a 1/4 cup water to prevent the bottom from sticking and just keep tossing the noodles.Once it's all well incorporated, shut with lid and on a low flame cook for 5-8mins. Then you should be ready to serve.
ReplyDeleteDo not soak noodles in hot water when you plan to make a stir fry, because it will bloat and become sticky. Only cold water!
