My
second week for meatless Monday was a bit easier. Breaskfeast I ate a pear and
some raisins in class. For lunch I
ordered salad from Putnams. My edgy mix salad contains mushroom, egg, corn,
onion, avocado, and mozzarella. For
dinner I helped my roommate cooked some bowtie noodles. In the bowtie noodles
it contains red and yellow peppers, mushroom, basil leaves, almonds, and lots
of parmesan cheese.
Overall,
none of my meals were affected. I planned out my meals on Sunday so I knew what
I was eating ahead of time. Meal planning is a great way to help give you more
time, makes cooking easier because you know what your cooking, and save money. Now
that I have left over bowtie noodles, I don’t have to cook on today and I am
not eating meat.

I mentioned before, I do feel healthier. I did spend more money this week to
make dinner. However, I did have left overs for a couple of days. Now that I am doing meatless Monday, my
friends are asking me about my progress. So far my experience for meatless Monday has
been going great.
It's great to see you plan out your meal for meatless Monday! There are times I tend to get lazy, especially after my night class on Monday and I don't feel like cooking so having leftovers or knowing what to eat would be extremely helpful. It's also great to see you getting the hang of eating meatless on Mondays! The pasta looks really delicious too! I'm a huge fan of pasta and I've been looking up different recipes for pasta to try out and I'm glad you shared your recipe!
ReplyDeleteI also spent more money this week for meatless Monday but that's because I bought extra vegetables and fruits so that I don't have to keep going grocery shopping. Thanks for sharing and I hope meatless Mondays will continue to become easier for you! Good luck!
