On my second meatless Monday, I had faced some difficulties. I had to go to campus earlier that day than I usually do on my Mondays. This gave me less time to plan my meals out. I started my day with an cheese omelet, toast, and glass of milk for breakfast. When I entered north campus’s student union, there was an event that was advertising for UB summer.
            At this event, Representatives told information about UB’s opportunities during the summer, gave cool prizes, and offered food. Fortunately, I remembered I was not eating any meat that day, so I refused the hotdog and gotten the cotton candy. For lunch, I had packed a peanut butter and nutella sandwich, apple, yogurt, and granola bar. 
            Dinner was the most affected meal of the day. This past Monday, my family was enjoying pasta with crispy chicken.  That night, I was about to serve myself a plate but realized I vowed to eat meatless on Mondays. So for dinner, I had steamed vegetables and a salad with croutons, carrots, feta cheese, and Greek dressing. As I finished my dinner, I saved some pasta and chicken to enjoy the following day.

            This week I realized benefits of planning the meals for the day to stay on track of eating meatless on Monday.  Additionally, I need to look for vegetarian meals to enjoy for Monday’s dinner.  Hopefully, I will be more prepared next Monday.

  1. First I would like to say that omelet looks good! As college students, classes do interfere with cooking. If I had enough time in the morning I would go cook but, unfortunately, my classes are early in the morning. I also like to plan what I am planning to eat ahead of time. This gives me more time to prep and I know what I am expecting to eat. If I didn’t plan what I was going to eat on Sunday, I think my meatless Monday would have been a little bit difficult for me. That is because I would have to use more time to think about what to eat and take more time buying or prepping ingredients. I had something similar to you where my friend offered to treat me to chicken wings. I am a huge fan of chicken wings and I almost forgot that I was participating in the meatless Monday campaign. I was a bit saddened, however, this is a great way to eat healthier and help the earth. Sometimes we are what your peers eat. Other people’s eating habits does affect out food choices. In my family, we eat a lot of rice, so even till now I still have rice as my daily main food source. I can tell that going vegetarian is a bit difficult for you and I since we do include meat in our daily diets. I believe on the next meatless Monday it will be an easier transition.   2. I love omelettes, so many different combinations of flavours.. you can always surprise yourself with a new omelette! Thats nice that your turned dog the hot dog.. but settling for cotton candy probably isnt the healthiest option.. but its nice to see that your really dedicated to meatless monday! Dinner is always a tough one! my mom is always making meat.. so i have to turn it down. The salad you made sounds great!!

  3. That omelette looks delicious I must say. I can completely agree with you on planning your meals ahead of time as I had the same dilemma this past Monday. I found myself to be more hungry then usual but that's probably because I didn't have enough protein in my diet. I also can relate to having to be on campus Monday more than usual causing my meals to be thrown off. This past Monday I spent most of my day on campus which is never the case since I don't have classes those days. But due to the fact that I was on campus it compromised some of my meals and I wasn't prepared as I should've have been.
    I was actually at that event in the union where they were giving out free hot dogs and cotton candy. I was so tempted to grab the hot dog. My friend was actually the one who had to remind to not actually take it. I guess that just goes to show you how easy it is to eat meat around UB.
    I found it really great that you were able to make yourself a salad instead of eating the crispy chicken with your family. If I were in your shoes I think I might have given in due to the fact that a meal was already prepared and so that's way more convenient than preparing a brand new meatless meal. I like convenience.
