This
Monday was a little challenging for me, it wasn't the fact that I couldn't have
meat in my diet but I was super exhausted from prepping for multiple exams this
week. For breakfast my meal consisted of one medium sized bananas, strawberry
fage yogurt and a cup of green tea. I consumed this this meal right before I
left the house and it actually kept me full until lunch time. I didn't find
myself consuming full meals until dinner because I was in the library almost
all day. While in the library I ate a pecan banana whole grain muffin with bottle
of water. It was delicious! At around 5 o clock I came home to grab something
to eat and prepared for the gym. I made myself a veggie burger sandwich with
cheese, avocado, tomatoes, onions and jalapeƱo peppers. This meal was perfect
just because it wasn't too heavy and after an hour I was fully fueled for my
workout. After my work out I came home, showered and did a little more work.
Soon after it was time to prepare dinner for my friends and I. I made rice with
black beans, teriyaki asparagus and mushrooms. I was happy that this meal was
quick, easy and something that we all enjoyed. Overall there wasn't a period
during my day that I felt uncomfortable and did not want to complete meatless
Monday. I learned from last week that I should try and think about what I
wanted to eat in advance so it wasn't hard for me to about what I wanted. I was
happy that the people around me were supportive of the movement that I was
apart which made it easy for me to accomplish my goals. I spent less money than I usually would if I
consumed meat products because majority of the things I ate were from my house.

ReplyDeleteI defiantly can relate to this week being more difficult than last in preparing meals due to midterms this week! I probably sent too much time cooking than when I should of been studying. I find it hard to balance both meal prep, school, and work some times during the week. I think that it actually is really helpful to do this on a Monday where we have the weekend to prepare food. Like you said, thinking and planning your meal for the day really does help the process of going meatless go smoother and even for days not going meatless for too. For some reason I cannot see the pictures of your meals but they sound amazing for you not having a lot of time to prepare them! Especially the veggies burger,I've always wanted to make my own veggie burgers because the ones in the stores that are typically frozen I usually see that they are loaded with sodium and other preservatives. Did you make your own or did you find a good prepared frozen one?? Also adding all of the toppings sounds really good to help add some flavor and also fill you up more. For next week I think I am going to try and have a veggie burger myself so thank you for the idea.
