For my second meatless Monday I had the following meals;
Breakfast: pumpkin flax granola with mixed fruit and soy milk
Lunch:kale sushi roll from wegmans and a side of seaweed salad
Snacks: banana, cottage cheese w/ pineapple
Dinner: black bean and cheese enchiladas!
I had a lot of fun with this week and tried to get as creative as possible with each of my meals. I love trying new dishes especially ones with ingredients that seem strange and foreign to other people. Without a doubt every time I ventured into the kitchen to whip something together at least one of my roommates was there intently watching and asking a million questions. It's cool to get such a response from the people around me, and to also be the one to introduce them to these foods. Dinner was again the most challenging; I have never made enchiladas and to say I made a mess while doing it is an understatement. The recipe I used required me to sautee some ingredients while boiling others, using a blender, and then baking. It was a bit difficult but when I tasted the finished product it was well worth it! It's fun getting creative with my meals and planning ahead of time makes it even easier. I definitely will try to continue to do meatless Monday in the future, and hopefully I can get my friends to join in with me next week.

I usually try to stick with simple and quick recipes but since I planned ahead and made the time to cook a meal that took longer to prepare I got to explore new ways of cooking the foods I eat. I feel like this project is giving me lots of new skills to utilize in the future and its makes me excited to be able to take that forward, creating tastey new dishes I would have probably never thought to cook before.

All your meals seem so interesting and creative. I wish I was that thoughtful with my meals. Your breakfast meal is the most interesting, I would love to try the pumpkin flax granola. I also liked that you got sushi from Wegman's that still followed the guidelines for meatless Monday; it shows that you can still get pre-made food that is healthy. It's cool your roommates got involved in your cooking, when I was cooking my dinner this Monday my roommates didn't notice at all that I was cooking differently.

You seem to be having so much fun with your meals! It's amazing that you have time to cook and try new things every week. I would say that having my roommates be curious has been another one of my favorite parts of this experience especially since they have been into cooking lately as well. Do they usually try to cook alongside of you as well? Or do they do what my roommates do and wait for me to offer them some food? It's really great that you have had the time to prepare your food in advance which allowed you to be more creative. I hope that the next few weeks I can learn to do the same, and I wish you luck with your future weeks!

Mainly my roommates just wait for the finished product and then emphasize how good it looks until I offer them a bite haha. But I think this coming week I'm going to make something tapas style for dinner so they can all be a part of it and share the meal along with me. I'm not sure what it will be yet but I'm hoping I can start getting my friends to join in since they're well aware that mondays now mean business in our kitchen.

ReplyDeleteYou definitely sound like you put a lot of thought into your meals this meatless Monday! Even the names of the foods you listed sound good. I'm glad this assignment has allowed you to venture into different areas of cooking. It's a super good thing that you plan what meals you want to make ahead of time so you're better prepared and it will most likely make this project super enjoyable and an amazing learning experience for you. Keep up the good work with future Meatless Mondays :)
