For
the second week of meatless Monday, I had more options of food available
because my roommate and I finally had time to go grocery shopping and I made
sure I bought extra vegetables and fruits to last me long enough until spring
break. To start off my day, I had my usual bowl of cereal and a cup of water.
After my first class, I went home and made myself some lunch. I used half of an
avocado and mixed in some black pepper and garlic powder for some flavor and
spread it over my two slices of honey wheat bread and fried an egg and split
half up and placed each half on top of my bread. It was a simple lunch but it
was enough to fill me up for a few hours before I ate a snack to last me
throughout my night class. For my snack, I had a peanut butter sandwich, a
banana, and a cup of organic soymilk. For dinner, two of my roommates cooked
and I came home from class and cooked a dish to contribute to the dinner table.
One of my roommates made a stir-fry tofu vegetable dish with sesame sauce and
my other roommate cooked some broccoli and cauliflower and rice while I made a
simple small dish of stir-fry cucumbers. It was a delicious meal and it
definitely left us feeling full.
I think my dinner was the most affected meal because there were a lot of vegetable dishes on the dinner table for once and I was pleased to know it was able to fill me up quickly. I think I am slowly getting the hang of meatless Monday. When I went grocery shopping, I did spend a little over what I normally spend on food but my reason is that I bought extra vegetables and fruits so that I have enough to last until spring break.
This week’s meatless Monday was a lot better than the first week. However, I did notice that I eat a lot of bread daily and I hope to have more variety of food. Overall, I see improvement and I plan to look up some more recipes to try some new dishes.
