This past Monday for the second week of Meatless Mondays went much better than the first week. I was much more prepared, and I was able to go out and prepare for the next few weeks as well. For breakfast I simply ate a bowl of cereal with milk. For lunch, I ate an egg and cheese sandwich, and for dinner I made a cheese pizza on a flat bread. I also did not seem to miss meat in my diet this week like I did last week, and I stayed full throughout the day even though I did not seem to eat as much protein as I usually do on weekdays.
            The meal that was most affected was lunch. Normally I bring a sandwich to eat with sliced deli turkey on it, but this time I went on campus to get a breakfast sandwich in order to fulfill the no meat aspect. This caused me to spend more money than I would have liked because I needed to eat lunch but yet I did not know what to pack for the meal so I had to purchase food. It is frustrating to have to spend more money, but I also am beginning to understand the benefits of eating less meat.
            So far this week, the fact that I went meatless yesterday has not seemed to affect the other days of the week. In fact, I don’t really seem to notice if I do or do not eat meat on certain days, but I think that going meatless on Mondays for the next few weeks will cause me to pay more attention to it during other days of the week. Going meatless yesterday did not affect others around me at all, but it did get me more excited to try it again another day of the week to see if I like it on days when I can actually cook.  Like I said in my last blog post, I am not a fan of having to go meatless on Mondays because my Mondays are so busy and eating meat makes it easier for me. I think that if I tried it on another day of the weak that it would be easier and even more enjoyable for me.
