So yesterday was a pretty busy day for me so I didn’t
eat as much as I planned. I woke up around 10am and went straight to class and
stayed there until around 2pm. This obviously poses a problem because I didn’t
make time for breakfast. Around 4pm, I had a chance to come home and make
something. I put together a spinach salad with oregano, sprouts, tomatoes, and
broccoli with olive oil and vinegar dressing. As simple as it was, it was
probably my most thought-out meal of the day. For dinner, I had pasta and sauce
with friends. Overall, I probably didn’t try as hard as I should have yesterday
for meatless Monday. It didn’t really affect others because the only meal that
I had in front of others was dinner and it wasn’t an out of the ordinary thing
to put together pasta and have no meat products along with it.
However, I decided to look into
healthy, vegetable filled meal options for next week so that I’m more prepared
and hopefully I will choose to find time to put the effort in making meals that
are healthy, meatless, and have lots of plant sources.

ReplyDeleteSorry to hear you had a busy day and skipped out on breakfast. Breakfast is the most important meal of the day. It is what keeps you running throughout the day. So I hope you don't skip out on it often. The salad sounds delicious and hopefully it was fulfilling. Looking into healthy ,vegetables meal options sounds like a smart option. Planning ahead is good and good luck with your meatless Monday

ReplyDeleteI had a similar experience this past meatless Monday. I had to go to campus earlier than I usually do on Monday and I had little time to plan my meals throughout the day. I’m glad that you were finally able to eat a nice meal after all those long hours on campus. The salad sounds delicious! I love how salad can be simple because you can add any fruits, vegetables, or nuts one likes. For the past two meatless Mondays, I have made a salad for lunch and those meals were my favorite for the day. My family had pasta with chicken for dinner, so I was not able to enjoy them. Unfortunately, you didn’t have time for breakfast but I do advice to eat something to start your day and get some energy to concentrate in classes for the day. Whenever, I am rushing to drive to school, I try to grab a granola bar, apple, orange, and yogurt to have for the hours I’ll be on campus. All those snacks helps me when I’m feeling hungry and suppress my urges to get something quick that might not be so healthy. It also helps me not spend so much money on food. I had learned that the hard way after commuting for two years. I also decided to be more prepared and look into healthier, vegetable filled meal options next week. Hopefully we are able to prepare some interesting and delicious meals. Best of luck for the upcoming meatless Mondays!
