Trying something different for me is usually always hard. I am a routine kind of a girl when I’m in school. Having a routine is the only way I can get things done. Today being the first meatless Monday I ever partook in was difficult. I usually have a turkey burger for dinner or a typical meal of rice, grilled chicken and veggies. It alternates depending on if I have time to cook a full meal also depends on my class schedule.

For this past Monday I had three meals. My first meal of the day was breakfast where I had 25 grams of oatmeal, made with 241ml of almond milk, and two boiled eggs. At around noon I got a little hungry and ate an orange. For lunch I went to Moes located at the union and got a salad, instead of my regular grilled chicken I decided to get tofu. I made sure to add more veggies so that I can be full. I put black beans, cilantro, tomatoes, guacamole, sour cream, and onions to my salad. That had to have been the best meal of the day. For dinner I had a veggie burger, with Sara Lee bread, onions, tomatoes, lettuce, and avocado. After dinner about two hours later I got a little hungry so I decided to eat some cereal and milk. I went to sleep soon after. My meal for dinner was the most affected. I usually have a juicy turkey burger for dinner or grilled chicken rice and beans. Due to only eating a thin veggie burger I was hungry soon after.

Overall, I wasn't as hungry as I thought I would be. I didn't really like the tofu. I missed my grilled chicken and my regular turkey burger. I felt like I was getting a little irritated throughout the day. I am not sure if that had to with the lack of meat in my day. It was really difficult trying to look for options without any meat. I hope the next few weeks get easier. I was so excited to wake up the next day and go have a turkey burger. I will have to try and start making new recipes because I need a variety if I’m actually going to go through it for the remainder of the weeks.
