Meals

Breakfast: 2 eggs, 2 egg
whiles, spinach, pieces of whole wheat toast, and ½ grapefruit

Snack: Apple and peanut

Dinner: Whole-wheat lasagna
with tofu, sweet potato, corn, mushrooms, cashews, kale, broccoli, red peppers

Dinner was the meal that
was most effected for me because I typically eat protein from meat like
chicken, turkey, or pork. But I already do not eat red meat because I honestly
do not enjoy the texture of it so it was not extremely difficult to eliminate
meat.

So far, going meatless on
this first Monday has not affected the rest of my week. I will have to track
the rest of the week to see if there are any effects. I have left over lasagna that
I will be eating that for the rest of the week so it does not go to waste. This
will help save time through out the week so I am not preparing a meal every
night for dinner. When I made the lasagna Sunday night, the preparation time as
well as cook time was much more extensive than most of the meals I typically
make. Having to sauté each vegetable before combining them with seasoning and
layering them with the noodles and sauce took the longest, not to mention
cutting and preparing all the vegetables first. In the future I will have to
plan more accordingly.

I ate the whole-wheat
lasagna for dinner at 6:30 pm, which is the normal time that I eat dinner.
Around 8 pm I was hungry again and typically I am not. In the future maybe I will have to have a
bigger serving size or have a side salad for more fiber.
5)
I believe I spent about the same amount of
money on meals. I will have to track the amount of money I spend more closely
on a day where I can eat meat. Over all, I have started to buy more organic
foods and organic vegetarian sources of protein seem to be cheaper than buying
organic meat.
6)
My roommates questioned why
my class was having me go meatless for a day so if was good to be able to
explain the effect that it has on the environment since most people only think
it is because of health reasons.
7)
This week I did not need to
use any resources. I have had a few receipts I’ve been wanted to try that are
vegetarian! Next week I will have to use a few for some more creative lunch
ideas.
8)
The most difficult part of thinking of ideas
to have dinner that will fill me up. I will need to focus more on sources high
in protein. I do not want to consumer more fats or carbohydrates and typically
vegetarian sources of protein I consumer with more carbohydrates than just
meat. For example beans typically I do not consume plain and quinoa has more
grams of carbohydrates than of protein.

ReplyDeleteI completely understand how you feel when you said that dinner was the meal that affected you the most because I usually eat protein for most of my meal as well. However, I found my morning meal to be most affected. In the morning, I would usually order Tim Hortons breakfast egg and sausage sandwich because I really just don’t have the time to cook anything. My roommate and friends also questioned why I was going meatless Monday and the reason for it. They were shocked and didn’t know that eating meat can actually harm the environment. Like you I also hate red meat due to the texture and, in general, prefer my meats fully cooked. This is why I am also not a big fan of sashimi. I am guessing you would feel the same as well. I read an article regarding consumption of red meat and it stated how red meat is linked to increasing chronic disease. The food in the picture looks really delicious. I am a big fan of lasagna. I did not know you can add tofu into lasagna and it will be something I will try in the future. Thank you for listing the ingredients you used. I know the first week of meatless Monday will always be difficult. This campaign will be a great way to increase more vegetable, fruit consumption, and also save the environment. I believe by the third week we both will not find meatless Monday difficult at all. Good luck on the upcoming meatless Monday, you can do it! :)
