My
third Meatless Monday was successful.
For breakfast, I had two hardboiled eggs and a sliced banana with peanut
butter. Monday was a really busy day for
me so I didn’t get a chance to eat lunch.
Around lunchtime, I had a small bag of chips and a granola bar. For dinner, I had leftover macaroni and
cheese, collard greens, and corn bread.
I drank milk, water, and tea throughout the day.
Dinner was the meal that was most
affected because my family ate ground beef with noodles which looked really
delicious. I was tempted, but I stuck
with my leftover macaroni and cheese. My
Meatless Monday probably won’t affect my meals the rest of the week. I didn’t use any additional resources this
week. I also did not spend any more or
less money than usual because I just ate what was at home.
Overall, this week was alright. Since I didn’t have time to eat a full lunch,
I was snacking until dinner. Monday
snuck up on me so I didn’t have time to plan or even think about what I would
eat. Next week, I’ll probably plan
things out better so I can actually have a full lunch.
