For the third week of meatless Mondays it was a little hard to adjust back to not eating meat after not having to do it for spring break. I almost had a chicken sandwich but remembered right before I made it.So instead I had a veggie sandwich with:
lettuce, tomato, sweet peppers, cucumbers and with light mayo and salt and pepper.
My next meal was before work so I made leftovers and that consisted of spaghetti and alfredo sauce and a strawberry greek yogurt. The picture below is after I ate half of it.
Then at work I only had a small bowl of greens and beans soup, in that is spinach, collard greens and garbanzo beans. When im at work I usually make a turkey wrap or something along those lines because I work at a pizza place and cant eat that and chicken wings anymore.
This week was a little harder just because we had a week off and then getting back into it
was not as fun but it was easier to do than I thought. It is nice having a bunch of left overs so I can pick and choose what I want and make a good and acceptable meatless meal out of what is there.
