 To begin, I have to say that I thoroughly enjoyed my third Meatless Monday. Before I get into this week’s meals however, during spring break I did dine out more than usual due to the extra time I had, and because of some of the activities I participated in. I believe most, if not all places I ate at, had plant-based options. However, I didn’t always choose those plant-based sources. I took a first aid course this weekend and they had subway catering for lunch, I took one veggie sub and one with turkey. Monday I had to work early in the morning, so I started the day with my usual breakfast, and packed fruits and vegetables, protein shake and greek yogurt. For dinner I made a cranberry apple quinoa salad!! It was delicious! I never thought to put fruit in my quinoa before.. this is something I will do in the future forsure! The quinoa I bought at Wegman’s. I got about a cup in the organic bulk section and it was almost five dollars. In the future, I’d hopefully like to find cheaper quinoa at a different store. I made the salad for my whole family to try, they all enjoyed it !

    Your meatless Monday post really caught my eye. It was full of colors and looked delicious. It gave me life lol. I never tried quinoa before and definitely not with fruit. I have always had a mind state that fruits and vegetables should not be cooked or consumed together. That changes when we went on the field trip and we consumed the kale and fruit salad. I appreciate that you found something outside your comfort zone and enjoyed it. Do you usually use pintrest to make your meals? Was thi meal hard to prepare? Thanks for sharing these meals with us, I am looking for other new recipes that you will try in the future
