For the first of the meatless mondays I planned my meals ahead and then shopped for all the ingredients. I usually eat a meatless meal for breakfast consisting of eggs, toast, etc. but the meal that was most affected was dinner. I normally shoot for some type of fish for my protein portion of the plate  but instead I chose some tofu and cooked a veggie tofu stir fry with eggplant pasta sauce and capellini pasta. And it was delicious. I've never cooked tofu myself before and I wasn't sure how it would come out but It was really filling as well as satisfying. I definitely spent a little bit more money but I feel like I didn't need to eat as much because I wasn't as hungry throughout the rest of the next two days. I used a couple different websites to get some ideas for putting meals together (i got the idea for a stir fry from http://minimalistbaker.com/tofu-that-tastes-good-stir-fry/) but I mainly just tried to use what I know and what I've learned so far to make my dishes. What i noticed most was how I felt afterwards. I felt so satisfied and full to just the right amount. And when I woke up this morning I actually felt more energized. I also tried to get mainly organic ingredients and compared the nutrition facts panel when selecting my food items. That could have definitely played a part in why I felt so much better the next day. It didn't so much as affect anyone around me other than my roommates patiently waiting, watching me cook so they could get the first bite after it was done. Overall, I had fun with it and now I have a great recipe to utilize when I want to go meatless in the future.
