o   Meal 1: Raspberries, 2 Hard Boiled Eggs, & an Oat/PB/Honey no-bake bar
o   Meal 2: Plain Greek yogurt w/ cinnamon and almonds
o   Meal 3: Spinach salad w/ avocado, pecans, sunflower seeds, peppers, onions, EVOO
o   Meal 4: Roasted chic peas and ½ Pita
o   Meal 5: Brown rice, mushrooms, peppers, onions, grilled tofu, orange sauce

o   Lunch was the most affected because I usually have a meal based on chicken breast, whether it be a salad or a chicken/veg dish.

o   Meatless Mondays didn’t change my eating habits the other days of the week, especially because other than lunch, I’m not a big meat eater anyways. I am Catholic, and during Lent I don’t eat meat on Fridays, so it wasn’t difficult to find other options (I’ve been doing that for 21 years).

o   I had to remind myself not to prep a chicken meal to bring to my internship! I’m so used to doing so that running around at 5 am remembering we started meatless Monday was a little hectic. Once I came up with a backup plan, however, it didn’t seem like an issue.

o   I live at home, and I just chose from things I already had. Spending was not affected.

o   Going meatless did not affect others around me. I intern until 2 PM and then work 4-10, so none of my meals were with family or friends.


o   I did not use any resources, just ideas I’ve used in the past. However, I completely forgot if eggs were “OK” or not, so I used them this week. I’ll have to ask for clarification (I didn’t remember her answer when Steph asked).

    Good job on your Meatless Monday! It seems like you usually do a really great job of eating healthy and homemade meals. I envy your motivation to be able to prep meals, especially at 5 in the morning! Prepping meals is definitely something I need to work on, since I usually turn to Ramen noodles if I don’t have something to eat. You have quite a busy day on Mondays and it’s really impressive that you have the time to eat such healthy meals. I’m also Catholic so I’m used to abstaining from meat, it’s just a change having to abstain from fish also. I’ve never tried tofu but a lot of people say it doesn’t taste good, but some say it tastes better after you acquire a taste for it. Have you eaten tofu for a while and did you have to “acquire” a taste for it? I remember eggs were considered “okay” to eat. Do you make the no-bake bars yourself or do you buy them at the store? (In the picture it almost looks homemade). Overall, really great effort this week and good job being meatless.

    First I must say your breakfast meal looks amazing. I think I may have to try that some day soon. I usually stick to oatmel and 2 boiled eggs. But raspberries may give that extra boom I would like. I also enjoyed that fact that you had five meals throughout the day. That was one aspect I was having trouble with. Due to the fact that I only ate three meals and none consisted of having some sort of meat was difficult for me. I felt like I got more hungry at night because I wasn't fully satisfied.

    I am also catholic and I've tried to do lent before but it was sort of difficult for me. But I love how devoted you are. That's definitely something to be proud of. It's nice to see that meatless Monday did not affect you so much other than for breakfast when you realized you could prepare a meal with meat. I may try some of your meals you have they all seam pretty tastey. Good luck.
