MY first meatless Monday went good, I did not eat any meat but then again I did not really eat anything at all, I was very busy all day and really did not get a chance to sit down and eat. I started my day with a blueberry poptart and that had a 9-grain bagel with strawberry cream cheese and a vanilla cream filled doughnut. My next "meal" was a protein shake, counting the milk it had roughly 40 grams of protein. That is all I had to eat for Monday.
Well Lucas, at least you did go meat-less! I would suggest using some of the resources posted to get some vital micronutrients into your diet. Yes, you may have met your protein requirements without meat, and definitely the fat & carb macros, but there was a ton of sugar and not any vegetables or real fruits (I don't count blueberry poptarts or strawberry cream cheese as fruit). I know the assignment is to go meatless and we are all very busy college students, but I would suggest leaning toward more "real" foods instead of highly processed and convenient foods. I assume going meatless was easy because you didn't have to plan any other nutrients into the day, but Edgy Veggie is RIGHT near Tim Hortons in the union- maybe use your dining dollars that way... OR get oatmeal if you're at a Tim Hortons not on campus (:
