Today marks the first of the six Meatless Monday’s I will be participating in, as agreed I will not eat meat all day. I think the most difficult part of this whole thing was remembering Sunday Night (as I was packing my lunch for the next day) that I could not eat meat. As an athlete I am always trying to get as much protein as I can, I found this a little difficult… But I think it is mostly because I am not use to it yet. I started off the day eating my usual breakfast ‘loaded oatmeal’ a full cup of oatmeal, with added peanut butter, banana and whey protein. Full of fiber to keep me full all day! I packed lots of fruit, yogurt, hard-boiled eggs and nuts for my lunch while I was at school. Dinner was the meal that I was most affected by, my mom made chicken for dinner, which was so temping to eat!! Luckily for me she made a chickpea salad for the side! So I stuffed my face with chickpeas and veggies. This was definitely healthier for me and better for the environment. Not eating meat affected others around me a little bit but not too much. They were very upset when I ate all the salad and left very little for them...  As a result of my experience I think that I would like to continue the Meatless Monday idea even after we are done with the assignment in class.  I think it would be very beneficial to my health and the environment.
