I am so glad that this is the last Meatless Monday. This past Monday I barely ate because I was so busy running around trying to get assignments done and study for my ES exam. For breakfast I had Jamba juice brown sugar oatmeal with bananas and a sixteen Caribbean passion fruit drink. For lunch I had a muffin and French vanilla coffee. I needed some caffeine to keep awake. For dinner I diced potatoes and let them soak in water for half an hour. Took them out and seasoned them with Lawry’s seasoning salt and adobe. Afterwards I put them in a pan, set the oven for 400 degrees, and put the potatoes in the oven to roast. I ate the potatoes with scrambled eggs and a slice on American cheese with a side of green tea.
            Lunch was the most affected meal because I was really craving a turkey sandwich from Breadbox and that would’ve kept me full for the rest of the day. When I came home I had to take time away from studying to make a meal because I was starving. Meatless Monday did not affect my meals for the rest of the week. I noticed that as the weeks progressed I am getting more irritable on Mondays. Especially this Monday because I was so busy I did not want to worry about planning out my meals. This time in the school semester there so many assignments due and the last thing on mind is having to cook or not eat meat. That’s why it’s so hard to do meatless Monday when your schedule is pretty hectic because you’re asking someone to take out an everyday habit from their schedule. I feel like this Monday was probably the most frustrating Meatless Monday to date. 

            I spent more money because I ate breakfast and lunch on campus. No one was really around me because when I have to study I like to lock myself in my room or be away from everyone else. So none of my friends were affected by my meatless Monday. I used my house and my groceries as a resource as well as my dinning dollars. I am excited that this is the last meatless Monday. I don’t think this project is for me
