This meatless Monday, I had faced
some difficulties in preparing the meals for the day. Since I was busy doing my
assignments that were due this week, I didn't take much time preparing my
meals. I started my day with scrambled eggs, few strawberries, and a small
wheat bagel with cream cheese. I left for campus earlier to study in the
library for my night class. On my way out of the house, I only grabbed a fruit
and yogurt for a snack. After studying for couple of hours, I ate my snack.
Eventually, I needed to stay awake and focus, so I grabbed tea to help me do
that.
That night, I went to my class and
was not hungry until near the end. Since I knew my mother had made an Indian
dish with cabbage and potatoes, I waited until I reached home to eat that for
my dinner. For dinner, I had the Indian
dish, roti, cup of yogurt, and few cucumbers.
My
meal that was most affected was lunch because usually I plan to have at least a
sandwich, fruit, and yogurt. However, I did not have all the ingredients to
make a meatless sandwich. Therefore, I decided to stick with my snack and grab
an entrée on campus. In the end, I was busy with work that I did not get hungry
for the time I was on campus.
When tests start coming up and assignments are due it really can be super difficult to stay on a regular eating schedule (i'm right there with you). I had three tests and a 12 page paper all due last week so meal planning was not at the top of my agenda. But I literally had no food in my house so I had to go grocery shopping and I figured I might as well take an extra 20 minutes or so to plan out a rough idea of what I wanted to eat and what I would have to buy. It might seem like you don't have the extra time but trust me it's there somewhere. And honestly it was nice to take a break from studying and think about something I love... fooooood! Your breakfast sounds delicious though even though it's simple you can always make a simple dish exciting with some variation. I'm a big fan of goat cheese now thanks to my older sister nicole. She worked as a marketing director for Red Newt Wine for a few years and had to learn all about pairing wine with cheese and food, so she taught me a few things and introduced me to a whole world of cheeses. One thing she loved to do was take baguettes, toast them, and put goat cheese with real jam on top for breakfast. I would never think to do that but it was SO GOOD. Or she would scoop out her bagels and make a "bagel boat" filled with diced tomatoes, pepper, onions, garlic, lay some cheese in the very bottom and slice a hard boiled egg on top. These are just a few ideas I think you might like to try but like I said you can use whatever ingredients you like instead. Also, do you have a recipe for the Indian dish you had for dinner? I've yet to try making anything like that but I'd like to try it out sometime and it sounds pretty tasty. Good luck with your meals in the future!
