Breakfast: scrambled eggs with garlic, red onion, broccoli. Rye toast with butter and green tea with lemon
Lunch: pumpkin flax granola with vanilla almond milk banana slices and a handful of mixed crushed nuts.
Dinner: stuffed sweet pepper poppers and cheesy mushroom Alfredo in baked spaghetti squash
This week I definitely spent way too much money on my ingredients but that was because I wanted to try some intricate dishes and I didn't have a lot of the ingredients to begin with. It ended up being fine though because I have extra of everything I made and barely used any of the ingredients I bought to make it the first time around. Overall this is by far my favorite week. Not only did my meals come out spectacular but they were so filling I'm going to have leftovers for days. My cooking skills are also starting to get better and instead of it taking me an hour to prep and cook everything I can do most of it in half the time. It's becoming a weekly event and I look forward to it every week when I plan out what I'm going to make. My roommate Ali even asked if she could come with me to shop and helped me make the dinner.
For breakfast I just made some scrambled eggs with all of my favorite spices, garlic, dill weed, onion and pepper and sea salt. I was pretty busy all day so I didn't snack at all between my meals and for lunch I was in a rush to get to a test so I made a quick bowl of granola with milk and fruit. After that I spent most of the day in the library and then cleaned my whole house because I have to move out soon. I was so tired from the day it was a relief to already have bought everything so I could get right to cooking. The stuffed peppers I made once before with my older sister so I recreated them from memory but I found a recipe that's similar to it that I'll post for everyone. The spaghetti squash however was completely foreign. It was pretty easy though, you just let it bake for an hour to get tender then fluff it all up and pour your sauce right in the top. I added mushrooms even though my recipe didn't call for it and used goat cheese instead of cream cheese. It was so good I've never been more excited to eat the leftovers in my life.
The only people seriously affected are my roommates who've now started to join in. some of them just watch though and ask me a million questions; what's this for or that. I swear they've never had a home cooked meal before. But I'm glad Ali helped me so she could be a part of the whole process and she even tried a little bit of everything even though she hates peppers.
I mainly used my own knowledge to make my meals this week but also referenced Pinterest for some cool recipes to try out. I feel like I'm really broadening my horizons with all of the dishes I've made and I'm excited to try them again but with some variations. But the best part is they are really healthy and I know I'm not just eating good in the end, I'm actually doing my body a favor by giving it what it needs; real food!

Wow Rachel! All that food looks absolutely amazing. We should've went to your house as a field trip (LOL). I've never tried stuffed peppers mainly because I don't really like spicy food but yours look pretty tasteful. May be a recipe I'll try with my roommate. It seems as though Meatless Mondays is something you enjoy taking parts in. I must say that is awesome. have such difficult with meatless Monday sometimes I feel as if I programmed to eat meat and any day without it can be a drag. I like how you decided to do something different, out of your comfort zone. To be quite honest I don't know if I could have tried squash but the way you descirbe it seems interesting. its nice to see someone enjoying this assignment. Hopefully you continue with meatless Monday even after this class. I can relate to having to pack up the house. I will soon be leaving my apartment. Its funny, I had an exam this week too, but for me I was studying last minute and Monday was not as smooth for me. But nonetheless Great job!
