This week for breakfast I
decided to go with a traditional meal. This was composed of 0% Strawberry Fage
Greek yogurt, brown sugar and banana oatmeal and 2 over medium well eggs along
with a glass of Lipton Diet green tea. My variation for breakfast was sort of
limited because I am always on a time schedule. I don’t wake up early enough to
create another meal because it just simply takes too long. This meal held me
for a couple of hours. So during work around lunch time I started getting a
little hungry. I decided to go to the vending machine and purchase a Smartfood
white cheddar popcorn. This snack satisfied the initial craving I had but left
me hungry not to long after. For lunch I
bought a salad from Moes. My salad composed of lettuce, tomatoes, cucumbers,
jalapeƱos, cheese, a small spoon of rice, black beans and tofu. This decision
was very difficult just because I am use to either eating steak or chicken on
my salads. I am a big fan tofu especially if it is cooked well. While taking my
first bite I was hoping for the best, and to my surprise it was actually
decent. The tofu defiantly did not taste like chicken but it was good. I
couldn’t wait to get home because I had already had dinner planned out for me
from this weekend. I decided to use a recipe that was introduced to me early in
the class, it was the Kale salad. In this kale salad I used plenty of avocado,
craisins, walnuts, sunflower seeds, and glazed pecans. I also made brown rice,
black beans, with an Asian inspired stir fried vegetables. I was very satisfied
with how dinner turned out, this meal was delicious. The hardest meal for me
this Monday would have to be breakfast. This meal gave me nothing to enjoy
because it was so typical and it wasn’t very satisfying. Meatless Monday didn’t
really impact the other days of the week because for the most part I was
content with my meals. I spent a little more money than usual because I had to
buy ingredients for my kale salad. My roommates all enjoyed the dinner I
created so that was great. Now that we are approaching the end of our meatless
Mondays I couldn’t be happier. This experience for me was very bitter sweet.

ReplyDeleteFirst of all, your breakfast sounds amazing. I know that you said you didn’t have a enough time to be able to have a breakfast with a lot of variety, but it sounds absolutely delicious to me. The brown sugar and banana oatmeal is what got me to think it has to be extremely delicious. I never thought to put banana in my oatmeal, and now I HAVE to try it. When you drink green tea in the morning is it your caffeine source for the day, or do you simply enjoy drinking it for breakfast, or both? I drink coffee every morning, and I am trying to get off of the habit without giving myself headaches every day, so I am looking to other sources of caffeine that won’t affect my calorie intake for the day. I have also always been afraid to try the tofu at Moes, and now that I know it is not bad, I am more willing to try it, though I don’t know if I actually will because I cannot go there without getting chicken. Your dinner also sounds as if it was absolutely delicious. The first time I tried a kale salad was in this class, and I have been wanting to make it myself. My only fear with this though is that I will waste some of it as I will not eat all of it in one serving, and I am always afraid that I will forget about it or that it will go bad fast in the fridge. ReplyDeleteI would have to agree with Chelsea that your breakfast does sound great! But I do understand how sometimes if you eat the same thing every morning for breakfast you can get sick of it because that is exactly how I feel not only on Meatless Mondays but most of the morning. It is hard to try to cook new things especially in the morning where most of us would prefer to sleep in instead of walking up early just to make a different breakfast. What I found to help with that is to eat a traditional "breakfast" meal for either lunch or dinner when you have some extra time to cook cause hey who doesn't like breakfast food for dinner.
Also, I was exactly the same when I first tried tofu. One of my friends actually mad a lasagna and did tell any of us that their was tofu in it but I was pleasantly surprised. When I lived on campus I would do the same thing by adding all of those other toppings to my salad but I was always too nervous to try the tofu. I;ll have to next time! I have to say your dinner sounds amazing! I thinks is great that you mad the kale salad we tired and you made it for your roommates as well!
I would have to agree I am also glad we are approaching the end of meatless Mondays, I think I will limit my meat consumption though out the week per one meal or so instead of a whole day without meat in the future.
