For
my fifth Meatless Monday, I had two hard boiled eggs for breakfast with orange
juice, tomato soup for lunch, and a slice of cheese pizza for dinner. I also had tea and bunch of chocolate and
candy from Easter. Honestly I was pretty
busy on Monday so I didn’t eat a lot or eat anything exciting. The meal that was most effected was dinner
because my family was eating meat and I was not. I did not spend any more or less money than
usual on Monday because I ate what I had at home. It was not that difficult to abstain from
meat.
This week’s Meatless Monday wasn’t
that interesting or creative and I had a super busy day so I barely got to
eat. I had to wake up earlier than usual
to work in the morning and then I went to class, so I was kind of running
around all day. I’m hoping next week is
less busy and I can get more creative and have time to eat more satisfying
meals.
I understand what you mean when you say you are too busy to eat. It’s getting to be around that time of the year where you don’t have time to do anything. With all of the end of the year finals, test and projects. I know the feeling. How was your Easter? I hope you enjoyed it. With all the candy you said you ate I am sure you did. I have to agree eating with your family saves so much money. I wish I was able to eat with my family more but I live too far away. I would love to live a few hours away and just drive home for a home cooked meal. I don’t think I could have not ate meat if my family was eating meat. I don’t have that will power. I would have to have some chicken. So I am happy that you can do that. Next week I hope that you also have a less stressful week and are able to spice up your menu.
