Meal 1: 5 egg whites, one full egg, spinach
o   Meal 2: Leftover cheesecake, spicy orange hummus, toasted pita
o   Meal 3: Apple and almond butter, too much Easter chocolate
o   Meal 4: 7 muffins (oops) almond apple carrot wheat muffins

o   This Monday wasn’t difficult, mainly because I was munching on Easter dessert leftovers! It’s very easy now that I’ve been doing Monday and Fridays meatless. I’m not tempted to grab meat, at all.

o   Meatless Mondays didn’t change my eating habits the other days of the week. I am on a strict diet and haven’t figured out (quite yet) how to complement proteins in an extremely low fat manner.
NNo additional costs this week. Again, they were leftovers!

  1. I had problems doing meatless Monday this week also. It's cool that you also went meatless for the Friday's of Lent. The almond apple carrot muffins sound really interesting and good. Maybe try more plant protein for a way to complement proteins in a low fat manner.
