This meatless Monday was the best so far! I had preplanned my meals earlier that week before I had gone grocery shopping, which allowed me to be much more prepared. I knew that I had work Friday through Monday so I would not have a lot of time to go grocery shopping just for meatless Monday this week or to prepare meals for the day over the weekend. By knowing my work schedule, it also helped to know when I would be able to eat a meal since typically I cannot eat while working.
For breakfast I was really excited to try something knew that I had found on Pinterst. I typically also eat an egg white omelet with spinach, one egg sunny side up, with toast and a grapefruit but I have become very sick of eating the same thing. It hasn’t even been helping when I add different vegetables to the omelet. So this recipe was an egg with oatmeal. I would have never though to combine the two in the same dish, typically I would just eat them separate. So I woke up early to make steal cut oatmeal because I knew it did take longer to cook. Added Italian seasoning to the oatmeal once it was fully cooks and added two fried eggs with scallions on top. Despite my judgment, it was so good! It was very filling as well with the fiber and extra protein in the steal cut oats and the eggs. Around 12 pm I had a granola bar and some veggies as a snack because I planned to have a late lunch since I knew that I would be working 4pm to 10pm and I would not be able to have a full meal for dinner. I stopped at Chipotle and ordered a salad there without any meat topping. Instead I ordered extra beans since beans and rice form a complete protein. Additionally, I added all the other veggie toppings and guacamole! This meal helped to keep me full until after work. When I got home, I was hungry. I typically do not like to consume a lot before going to bed but I was in need of a snack. I had an apple with peanut butter and chocolate chips to satisfy my sweet tooth.
 This week I think that I spent less money than in the pass. Unlike the last weeks though, I did not have any left overs that I would be able to use later in the week. There is a trade off in spending more money obviously for more food. I also defiantly left a lot better overall compared to the last two weeks where I have been traveling and had limited food selection.
