This Monday I was actually focused all day on not eating any meat starting from when I woke up. For breakfast I had blueberry waffles with strawberry Greek yogurt. This was the first time in a while that I actually put time into eating breakfast. Usually ill either skip it and wait until lunch before I eat.

For lunch I didn't really have anything, I wasn't very hungry so I had just an apple with peanut butter.

For dinner I was at work so I didn't have that many options since I don't eat what I make at work but since I didn't have lunch I made gnocchi with red sauce and made a salad with cucumbers, carrots, sweet peppers and onions that were grilled topped with Italian dressing and sprinkled on some parmesan cheese.
This week was definitely easier for some reason, hopefully it'll be like this for the next couple weeks.

    Great to hear that you focused on not eating meat all day. I usually skip breakfast too but have been trying not to since starting this project. The food you made at work looked really good. Why don't they let you eat any of the food you actually make at work? Good luck with the rest of the meatless Monday's!
