The fifth week of meatless Mondays started of like week one or two. I didn't eat anything until around 5:30-6 when I was at work. Im not sure why this happens, the only thing I can think of is that because I know im not supposed to eat meat I don't want to eat in general.
Because of this by the time I got to work I was very hungry so I had a small bowl of black bean soup. It honestly looked like a bowl of tar with beans in it. But I added some crackers and it tasted fine. A little late I made a salad with iceberg lettuce, cucumbers, shaved carrots and chic peas as you can see in the picture. Then about an hour later I made broccoli and ziti with garlic butter sauce and melted mozzarella cheese and garnished with parsley flakes.
For a snack while I was watching the basketball game I had some trail mix and that capped off my Monday.
After doing this for five weeks I think that living at home makes it harder to not eat meat because it is then main thing that my mom's fiancé cooks. We do have other things to eat but whatever he makes is so good that it is hard not to eat it and the sides he makes that I could eat are not big enough or filling enough to have by themselves. Also from reading everyone else's blogs they make it seem like living either on campus or off campus is easier because you have to go out and buy things to make dinner so you are more likely not to buy any meat products.
