Yesterday was the best day I had yet during this Meatless Monday’s campaign. This greatness came from the fact that my mom sent me home from Easter dinner on Sunday with plenty of leftovers that I could eat throughout this entire week. We do eat some meat on Easter Sunday, but mostly we eat meatless items such as pasta salads, potatoes, and much more. The leftovers that she gave me were extremely helpful in my being able to eat meatless yesterday and to make it extremely easy for this to happen.
            For breakfast I ate an egg white and an egg scrambled with a little bit of pepper and an English muffin. For lunch, I ate quinoa from the Big Blue food truck. It was the first time I had ever gotten anything from the food truck, and I was delighted to see that they had a meatless option. The quinoa was absolutely delicious, and to top it off it was only two dollars. Because everything else I ate yesterday was from my mom/things I already had, this was the most money I spent on food all day which was incredible. It was very filling as well, and it came to me hot. I was concerned that it might not because it was coming from a food truck, but it really was delicious, and I would get it again in a heartbeat. For dinner I ate my absolute favorite part of Easter dinner which is pierogis. These are a polish food which contain either cheese, potato, or sour kraut. My favorite are the potato ones. It was extremely easy for me to heat these back up for dinner yesterday while I was at work, and it was delicious.

            Yesterday taught me how much easier it is to simply heat food back up on Mondays rather than cooking it from scratch. As this week coming up is our last week to be a part of this campaign, I plan to really cook something good up on Sunday that I can reheat on Monday to enjoy.
